Guacamole

By far the best guacamole. Generous on the salt and cayenne for extra kick. Also add fresh jalapeno if on hand to taste.

Shredded Chicken Tacos

These were a huge hit. A bit on the salty side though - no need to add the adobo to the sauce since the chicken is generously seasoned before searing.

Peach-Basil Sangria

Great combination of flavors. Cook down the fresh peaches and basil in the peach nectar for richer flavor. Also added vodka/reduced sugar to cut sweetness.

Everyone loved this. I paired it with homemade pineapple ice cream and shredded coconut, but this is what made the dessert so incredible. I didn't have any rum on hand and it tasted fine without. I also prepped it the night before and reheated on low on the stovetop and it was fine.

Fruit BBQ Marinade

Stellar! I marinated chicken overnight and it grilled up beautifully. I was unable to find pineapple preserves, so I used apricot instead, which added a nice twist. The chicken got rave reviews and the marinade took minimal prep time. I'm putting this in my normal cooking rotation.

Fruited Ice Cream

I substituted pineapple for the berries. It was easy to make, but not the best ice cream recipe I've used. The texture was a little bit more icey than creamy. It was good out of the machine, but didn't freeze well.
