This sweet potato bread is divine! It's incredibly moist and has just the right sweetness! A staple for summer. I substituted applesauce + a little bit of melted smart balance for the oil... perfect!

Oh my goodness, I never thought I would ever crave eggs and vegetables so much! This is an excellent, superb recipe! So easy, yet so elegant and tasty! As people have said, warming the empty pie pan for a few minutes before pouring in the mixture prevents a soggy bottom. Try this recipe with shredded carrots, a mixture of muenster and cheddar cheese, chopped mushrooms, and pam instead of oil.

This exact recipe is an old family favorite! It's a very easy recipe to follow, and it's pretty quick! You can also shake things up by adding nuts, chocolate chips, dried fruit, etc. If the cookies aren't sweet enough, try glazing with powdered sugar + hot water. You can coat them, drizzle them, etc.
