Diane's Colcannon
Made this for St. Pat's day dinner with a corned beef cooked in the crock pot. I changed a couple of things...my daughter is very allergic to potatoes. She can't even be in the house when I cook them... So I used a package of Simply Potatoes mashed. They worked great. I did everything else according to the recipe. Made them ahead, placed in casserole and heated in oven when we were ready to eat. Everyone loved them. Has anyone tried them with a little cheese on top? Might be tasty! Thanks for a great recipe.
