About this Cook
I am in my early 30's. Married with one child. We love traveling and hanging out as a family. I have been using all recipes for as long as I can remember and love to come here and get recipes primarily for quick and easy and healthy dinners for my family.
My favorite things to cook
I like stir fry because it's easy but there can be so many different variations to it. I also love trying to bake different kinds of cookies and desserts to give them a try. I usually let my co workers be my guinnea pigs!
My favorite family cooking traditions
Thanksgiving and Christmas. Although I have to admit I am tired of cooking for large groups of people anymore!! Summer time grilling is my all time favorite!

Turkey Wraps
Nice cool wrap for summertime. The only tweaking I did was that I used bacon bits (sparingly since they can become quite overpowering taste bud wise) & I used plain cream cheese and bought fresh chives which I cut up and mixed together with the cream cheese. I did use Dijon but sparingly, my husband is not a big fan of mustard and I really wanted him to enjoy the wrap! Super simple to make, rolled them up and off to the picnic and music in the park we went! Tasted great. Will definately make again.

Black Bean and Corn Salad
I make this salad the night before and let it sit overnight in the refrigerator so that everything can "mix" together. I then pack it in individual 1 cup containers for use at picnics in the park or to bring to work for a healthy snack. Good way to eat black beans (healthy) with a little bit of a kick with the cumin spice. The only thing I did differently was I bought black beans in a can that were "southwestern" and already mixed with cumin spice. I did not rinse my black beans off but you may want to because the cheese chunks get a bit "slimy", doesn't bother me but might bother others especially those folks (I have a few in my family) who freak out if they have to eat anything healthly like "black beans". Overall a very simple, easy to create and very healthy dish. I used lower fat/skim mozarella cheese to keep it on the healthy side.

Beefy Baked Ravioli
FANTASTIC! I rarely give recipes 5 stars but this one was great! Not only great tasting, but easy to make! I followed the advice of another reviewer & added tomato paste to thicken things up and I also added chopped onions and green pepper to the hamburger while it was frying. I could not stop eating this, my guests loved it, awesome!! Served it with some breadsticks and a green tossed salad and you have a simple, nutritious, inexpensive meal that does not take a lot of time to prepare.
