Mexican Shepherd's Pie
My mom always made this for us growing up (but was called "railroad pie" for some odd reason) I still make it and it's one of my hubby's favorite dishes. Only change I make is to use a Mexican cornbread mixture for the topping, really kicks it up a notch!

Marinated Pork Tenderloin
This is my "go to" recipe for cookouts and special dinners...EXCELLENT. I have even eaten the leftovers cold! It's just that good! Highly recommend as other users suggested making extra marinade to use for a gravy afterwards.

Gary's Stuffed Mushrooms
Made this for appetizers for an Italian dinner and they were a HUGE hit! Although the stuffing makes alot and I saved it in the fridge for the next day. For some reason was not as good when used the next day.
