Brussels Sprouts in Mustard Sauce

People always rave about my cooking; I'm some glad I didn't serve this to guests! Not good at all! My only saving grace was that I tasted the sauce before adding the sprouts, which we love, so we didn't waste them.

Stuffed Peppers

Delicious! I used mini sweet red/yellow/orange peppers and stuffed them whole. I mixed the parmesan into the filling. These make great appitizers when prepared with the small peppers.

Irish Cream Chocolate Cheesecake

Fantastic cheesecake! Made it for my Sister-in Law's birthday, and everyone raved about it. I make cheesecakes often, and have never had one crack so much (maybe I overcooked it a bit, wasn't watching too closely, and I think my oven runs a little hot), but a ganache finished it off nicely, and made it even richer!!! I couldn't taste much of the Irish cream, and I put in 1/2 cup. It was delicious nonetheless. Definitely a keeper! Thanks, Elaine!

Spicy Bean Salsa

I use fresh tomatoes, jalapenos, and red onions for extra color. Also, before adding the Italian dressing, I pour as much of the oil off as possible to lower the fat content of the dip(I don't find the light dressing is as tangy). Paired up with baked tortilla chips, this is a great, low fat, high fiber treat!!YumYum!

Real Italian Calzones

I tried halving the recipe, as so many thought these were quite large, and made mini calzones for appitizers. I also added some green pepper and olives. Delish! My only change would be to prick the tops with a fork before baking, as they all exploded a bit!!Thanks for the recipe!!
