Chicken Florentine Rice Casserole

This was a great casserole. It was very flavorful and also filling. I didn't have Parmesan cheese, so I sprinkled it with feta during the last 15 minutes of baking. Yum! By the way, it would be really easy to substitute mushrooms for the chicken and have a vegetarian dinner.

RamJam Chicken

I used bone-in skinless thighs for this and marinated them overnight. The chicken had a very good taste, but it wasn't like marinated chicken--the flavor didn't sink it. Maybe it was due to using bone-in pieces. I'll try it again with chicken tenders.

Chicken Stuff

I made this using one can of cream of chicken and one can of broccoli & cheese soup. I added about 2 cups of steamed, chopped broccoli. It was pretty good, and we will probably have it again.

Scrumptious Chocolate Cake

I made this cake for a potluck yesterday. It was a hit, although I thought the frosting was a little too sweet. My sister, who is a fudge-a-holic, loved it. I guess it depends on your sweet-tooth. :o)

Creamed Spinach Casserole

I tried this recipe last night and modified it some by adding: a can of mushrooms, drained; 1/4 cup feta cheese; 1/2 can of artichoke hearts, drained & chopped; and some garlic powder. It turned out good. Next time, I'm going to add some Swiss or mozarrella cheese too.

I made a couple of changes: I used plain diced tomatoes, undrained, and instead of onion, I used 1/4 tsp. onion powder. It turned out really good, except I think I'll use 2 cans of tomatoes so it will be saucier. We had it over rice and really enjoyed it. Thanks!

Beef or Chicken Marinade

This is a great recipe; it's very flavorful and really easy. I used this on chicken. I didn't use green onions, but rather 1/2 tsp. onion powder. I boiled the remaining marinade and we ate it over our rice. It was great!

Incredible Punch

Caramelized Apple Bites

These apple bites were really good right after I made them, but I didn't serve them for a couple of hours. By then, all the juices had combined with the caramel and turned really soupy. They still tasted good, though. Just serve them immediately!

Chicken, Garlic, and Sundried Tomato Pasta
