Frozen Strawberry Margarita

I made a variation of these last night using the whole 6 oz. can of frozen limeade and also adding 2 oz. of margarita mix. Very tasty!

Spinach and Mushroom Quesadillas

We had these last night using white mushrooms instead of portabellas b/c that's what we had. Also, I added some paprika and chile powder to season up the filling a little, and I didn't use any oil to brown the quesadillas - they did fine in our nonstick skillet w/o any added fat. They were really good!

Dill Pickle Soup

Yes, I did submit this, but I thought I'd review it as well. It's one of my favorites! It doesn't have a strong pickle flavor, but rather all the spices combine to give it a very unique taste. I found a similar recipe a long time ago and have modified it by my tastes to what you see posted here. I love it. I hope you enjoy it too!

New England Dinner

We've made this a couple of times now and love it. Following other reviewers' suggestions, I brown and drain the kielbasa before adding to the casserole. I also added salt & lots of freshly ground pepper. Then I pour 2 cups of chicken broth over everything rather than 1 cup of water. I use my stoneware casserole & lid to bake for an hour. With my changes, I'd give it 5 stars, but I think as it is would be too bland for our tastes.

Spicy Pretzels

These are great! I scaled down the recipe to work with one one-pound bag of mini pretzels and made a batch yesterday. The only change I made was to substitute garlic powder for garlic salt, and I was out of cayenne pepper so I used chipotle chile powder. They were delicious! I did not bake them as other reviewers suggested, and they were not too greasy.

Healing Cabbage Soup

I decided to try this last night since I'm fighting a cold. It was delicious! I did make a few changes though, which is why I only gave it four stars. I used 8 chicken bouillon cubes instead of 4, plus I added extra herbs & a pinch of red pepper flakes as someone suggested. I substituted 1/2 tsp. onion powder for the onion and used more garlic than called for. Since I left out the onion, I only needed 1 tsp. of olive oil to sautee the garlic. We served the soup with some French bread brushed with olive oil and sprinkled with garlic salt & Parmesan cheese then toasted. It was an excellent meal!

Fried Artichoke Hearts

Slow Cooker Scalloped Potatoes with Ham

I made this for a covered dish lunch at work today, and it turned out really good. I gave it 4 stars b/c I think it needs some more cheese. Next time (there WILL be a next time), I think I'll add a can of cheddar cheese soup or at least another cup of shredded cheddar. :)

Portobello Mushroom Stroganoff

We had this last night. There were a few modifications I made...I didn't use the onions b/c I don't like them. I used onion powder & garlic powder instead. Also, I used a whole pound of portobellos and the whole 12 oz. bag of egg noodles. I didn't have vegetable broth, so I used 2 cups water with a pkg of au jus mix. It was delicious! I'll definitely make it again! :)

Crab Quiche II

My husband and I had this for dinner last night with a nice salad. I made it exactly as the recipe called except I substituted provolone for Swiss b/c I don't like Swiss cheese. I loved it! He wasn't as fond of it, but then again, he doesn't really care for imitation crabmeat other than in cold dips/salads. I do plan on making it again. I might possibly add some garlic and/or herbs next time to see how it tastes with some more flavors. Thanks!

Absolutely Fabulous Portobello Mushroom Tortellini

I didn't have wine, so I used chicken broth instead. This still turned out really well and was very easy. I'll make it again, but next time I plan to make homemade sauce rather than use the stuff out of the jar.

El Dorado Beef Casserole

The only complaint I have about this recipe is that it's a little bland for our taste. We doused ours with hot sauce and fixed it right up, though! :o) Next time, I will add some more seasonings to the tomato mixture. Other than that, it's great! By the way, I subbed TVP for the ground beef (1 cup TVP reconstituted in 7/8 cup boiling beef broth), and it worked really well.

Jay's Signature Pizza Crust

Excellent pizza crust!!! We made one 13" pizza on our baking stone the first night and refrigerated the 2nd half of the dough. The next night, I pulled the rest of the dough out and made another pizza. It was just as wonderful! By the way, I did take the suggestion of others and added some Italian seasoning and garlic powder to the dough. YUMMY!

Busy Day Chicken Rice Casserole

Southwest Chicken

This is a very easy, healthy, and filling dinner. I'm on a diet, so I replaced the oil with fat-free cooking spray. I also added a bit of minced garlic. All in all, this was wonderful. It's only 5 (Weight Watchers) points per serving, too!
