Glazed Apple Cookies

I made these for my daughter's class apple tasting event. I left out the nuts and used butter (I avoid working with shortening if I can). I shredded the apples so I could squeeze the ever living daylights out of them so the dough didn't end up too watery. I don't know what size cookies these are supposed to be that it only makes 18, but I got 3 normal sized cookies short of 5 dozen. They're good. Definately sweet enough without the icing.

Blueberry Sour Cream Coffee Cake

YES! This is fantastic! I just pulled it out of the oven 15 minutes ago, had a couple bites and ran to the computer. I made some changes out of neccessity, since running to the store with a 7 and 8 year old and a 3 month old wasn't on my priority list. That being said, I won't hesitate making this as written next time when I have all supplies on hand. I had to use 1 cup white sugar with 1 cup brown. I used frozen mixed berries. And 1/2 cup sour cream, 1/2 cup plain yogurt. Delicious! This won't last long in our house :)

Zucchini Bread IV

Oh my goodness, perfect! Only change... half oil half applesauce. I quadrupled this and did half with nuts and raisins, half without. And now I have 6 loaves and 4 mini loaves to pass out :)

Bran Muffins I

I brought the servings down to 18, and it made 24 in regular cupcake pans. These are delicious. Only thing different I did was add 2 boxes of the individually packaged raisins to the mix since there wasn't a whole lot in only 1 cup of rasin bran. My boyfriend was happy when he got home and took a bunch to work with him today. Even the kids are eating them up!

Cowboy Oatmeal Cookies

I usually can't make an oatmeal cookie without screwing it up. In fact, after my last attempt, I vowed to give up trying my hand on oatmeal cookies. These though, these turned out perfect! I waited till the morning after to review to see if they're still chewy, and they are! I seperated the dough in half and used raisins for one half for my boyfriend and used the butterscotch chips for the rest of us. Perfect! These are a keeper.

Raspberry Lemonade Pie

The taste of this pie is amazing! However, I don't know what I did wrong, but it didn't seem to set right. I followed the directions to a T. Will try again though! ETA 6/2-- Made this again last night with fresh strawberries instead of frozen raspberries. Cut into it today and it seemed to have set a LITTLE bit better. Not much. It's definately not so tart with the strawberries instead of raspberries.

Baked Paprika-Parmesan Chicken

I was uneasy about this recipe because, well, I always tend to screw up chicken breasts. But my boyfriend wanted some chicken and I had some chicken to use. Followed the ingredients exactly, but I'm glad I saw the reviews about cook times! Let it bake for 40 minutes and it turned out perfect, super moist. Will make again. The kids loved it too!

Cheesy Vegetable Lasagna

This turned out really good. I did have to cut the 12 noodles down to 9 as I ran out of sauce. If I want to try to get in the entire 12 noodles next time, I'll double the sauce. Other than that, it was great. It got me to eat my veggies! Also, yes it is time consuming. But any time you have to chop a larger amount of veggies and have to put something together, it's going to be consuming. Totally worth it.

Jackie's Special Meatloaf

Panko really is the best. I "discovered" it last year and haven't looked back. You shouldn't either. Just compare the ingredients between panko and standard bread crumbs. Blech! This meatloaf turned out delicious. Did add bbq sauce, onion, and celery. Also used fresh garlic. Yummy!

This recipe is perfect as is! The frosting melts in your mouth and has the perfect lemon flavor. I am so glad I didn't listen to all the other reviews and halve the sugar... This one is perfect!

Lemon Gold Cake

I don't know what I did wrong, if anything, but the cake was pretty dry. I followed the recipe to a T, so it's not because I strayed from the recipe. The lemon cream cheese frosting bumped this up to a 4. But I wouldn't rate the cake alone that.

Flatlander Chili

This has been my go-to chili recipe since I found it last year. I wish I could cook like my dad and start pulling stuff out of the pantry and fridge and whip up a meal, but I need a recipe in front of me at all times. The first few times I made this, I followed it as is and it turned out wonderfully. You don't need to change a thing. Yesterday however, I had a ton of spaghetti sauce I needed to use, which had ground beef, green pepper, mushroom, stewed tomatoes, onion, spinach and garlic in it. It had to go, so that's what I used for the tomato sauce. I also used only 1 lb ground beef (which was in the spaghetti sauce) and 1 lb of sausage. It turned out great, and I'm enjoying it again today!

Spinach and Feta Pita Bake

These were so delicious. My boyfriend and I both loved them and neither of us are feta fans. The only alteration I made was using pesto with basil instead of the tomato pesto. I went to two different stores to find the tomato pesto, and I didn't want to try my luck with a third and fourth, so I settled with the other pesto. It was really good and I'll be making these again soon.

Slow Cooker Garlic Mashed Potatoes

I went with this recipe because I'm all for easy on busier days. Throw the potatoes in the crock and let them go! This will be my new mashed potato recipe! Served with chicken fried steaks and salad, we had a great dinner. I did add sour cream and cream cheese to these and they turned out fantastic. Mashing them with a masher was soooo easy and effortless, no need for a mixer. I usually screw up mashed potatoes, but not these!

Chicken Fried Steak III

I'm not a big beef person, but I had some given to us by family that needed to be cooked. That being said, my boyfriend and my kids LOVED these chicken fried steaks. I left everything the same, except I didn't add flour to the egg and I halved the chili powder so it wasn't too spicy for the kids. I liked the breading and gravy a lot, as did everyone else. The girls' have already had leftovers for lunch today.

Turkey Pot Pie

This is absolutely fantastic. I doubled it and made 2 pies as I had a bunch of carrots, celery and half a turkey left. We ate half the first pie for dinner, then ate the rest of the first for breakfast today. And I'm still not sick of it! For the 4 cups water, I used 1 cup chicken broth and 3 cups of water. I also added some turkey gravy into the mix. Aside from that, I followed the recipe exactly. I'm freezing the rest of our turkey so I can make this again. Perfect!

No Bake Peanut Butter Pie

I made this once over the summer, and once for one of our Thanksgiving desserts. The one I made in the summer, I listened to previous reviewers and didn't use all the required cool whip. It was frozen solid and hard to cut. The last one I made, I did use all the cool whip and it was much easier to cut and a creamier pie. I would definately be sure to use all 16 oz of cool whip. We all loved this in chocolate crust with Dove chocolate sauce on top. Delicious!

Easy Sour Cream Cheesecake

This cracked on me, even with a water bath, but I didn't mind. I covered it with a berry sauce. Everyone loved it and there were no leftovers.
