About this Cook
Mom to two wonderful kids. Have an amazing boyfriend :) Divorced a year ago and moved back to my hometown from Washington state. Forgot how much I missed this place!
My favorite things to cook
I love baking things. Breads, cookies, brownies, you name it. I love cooking new things. Even if they turn out bad. Cause hey, it's all a learning experience :D
My cooking triumphs
Lasagna! I made lasagna for the first time ever a while back. I always put it off because it seemed so difficult. But it turned out perfect!
My cooking tragedies
Oh gosh. Lots. But I remember a time when I was still living at home in high school, I preheated the oven (duh), and when I went to put whatever I was making in, there was a melted plastic collinder all over inside. What a mess! Now who on earth put that in there?! Lesson learned... I always check the oven before turning it on ;)

Glazed Apple Cookies
I made these for my daughter's class apple tasting event. I left out the nuts and used butter (I avoid working with shortening if I can). I shredded the apples so I could squeeze the ever living daylights out of them so the dough didn't end up too watery. I don't know what size cookies these are supposed to be that it only makes 18, but I got 3 normal sized cookies short of 5 dozen. They're good. Definately sweet enough without the icing.

Blueberry Sour Cream Coffee Cake
YES! This is fantastic! I just pulled it out of the oven 15 minutes ago, had a couple bites and ran to the computer. I made some changes out of neccessity, since running to the store with a 7 and 8 year old and a 3 month old wasn't on my priority list. That being said, I won't hesitate making this as written next time when I have all supplies on hand. I had to use 1 cup white sugar with 1 cup brown. I used frozen mixed berries. And 1/2 cup sour cream, 1/2 cup plain yogurt. Delicious! This won't last long in our house :)
