Skillet Ole

This is a very good, quick meal. I used all ground turkey, a whole green pepper, and added a can of diced tomatoes. I also topped it with taco cheese instead of plain cheddar. Needs salt, but otherwise, quite tasty.

Browned Butter Vegetables with Almonds

Delicious! I used more cauliflower than broccoli (didn't have a full 2 cups of broccoli on hand) but totaled the two out to 4 cups, and I also didn't have any bell peppers but used a bit more onion than called for (I used a large red onion and cut it into 2-3 inch strips rather than diced it). I also took a reviewer's advice and pre-cooked my broccoli and cauliflower a bit, boiled them in some chicken broth for flavor. A very yummy way to spice up your vegetables!

Easy Morning Glory Muffins

Very healthy and delicious! I didn't have any carrots on hand but had some shredded zucchini in the freezer, so I used that, and I didn't have any coconut so I used an extra apple. This made more the batter wetter than it likely would have otherwise been, so I used 1/2 c. unsweetened apple sauce in place of the 1 c. oil. So, other than the egg yolks, I had some fat free muffins! I also replaced 1/2 the flour with whole wheat, which gave them a nice flavor. They were a big hit!

Good Old Fashioned Pancakes

You found it! I was looking for the perfect pancake recipe and this was it! Light, eggy, moist, not dry and cakey like so many other pancake recipes I've tried. Absolutely perfect.

Zucchini-Chocolate Chip Muffins

Awesome! These were a big hit. I made some small adjustments to make it a little healthier -- 1/3 of the flour I replaced with whole wheat, 1/2 of the oil I replaced with unsweetened applesauce, and 1/3 of the sugar I replaced with the equivalent amount of stevia powder. Still delicious! I also over-measured the chocolate chips, just couldn't resist. :) So good!!

Crusty French Bread

This is great bread! I cut the sugar down to about 1 T. as I don't like overly sweet breads. And I disagree with the top reviewer about the great importance of exact flour measurement and kneading time. Years ago I was told that for all your basic bread recipes, you only need to keep adding flour and kneading until it's the right consistency - somewhat tacky and pliable but not sticking all over your hands. When it's gets to the right consistency, you're done with both the flour and the kneading. I read that review and chose to stick to my method and it still turned out perfectly. Just delicious! Don't stress yourself out over it! :)

German Chocolate Pie

Very good and easy to make! I didn't have German chocolate; I just used Hershey bars and those were great. It was a little on the over-rich side, which is why I dropped a star, but otherwise it was lovely.

Special Rhubarb Cake

Quite good! I doubled the rhubarb as suggested and it seemed like a good amount. I also wish I would have gone with my gut and cut the sugar in the vanilla sauce because it was WAY too sweet -- I tried toning it down by adding 1/2&1/2 (had used up all my evaporated milk) but it was still over the top and now it took too long to thicken. I added a splash of brandy which was a yummy addition, and then cut the vanilla down because the buttery/brandy flavor was great as it was. I eventually caved and added a little cornstarch and water to thicken it because it was just taking too long. Overall this was very popular - I just dropped a star for the necessity of adding rhubarb and cutting the sugar.

Lana's Sweet and Sour Meatballs

I thought this was good; my husband isn't a huge sweet & sour fan but he ate it without too much complaint. ;) Per reviews, I doubled the sauce as well as the vegetables. This does make TONS of meatballs, so I froze the few that I had to bake in a second batch after the first batch had already been added to the sauce.

Incredibly Easy Chicken and Noodles

Hmm, well, there isn't much to this. It's not bad, but it's a little boring. I added sautéed onions, and Cream of Mushroom with Roasted Garlic soup, so I left out the onion and garlic powder and added salt and pepper to taste. One reviewer was right about the leftovers being less than appealing, but we ate them anyway; we're not too picky I guess. I also used canned chicken. This was certainly easy and inexpensive to make, not bad in a pinch, but I'm not sure I'll make it again.

Creamy Rhubarb Dessert

I made this for a bridal shower, it baked up just as advertised and people thought it as very good. I added just a little extra sugar to the rhubarb and it was just sweet enough. Lots of steps, but thankfully you don't have to wait for it to cool between adding layers.

Banana Crumb Muffins

These are awesome!! I subbed 1/2 c. of the white flour with whole wheat, 1/4 c. of the sugar with 1-1/2 tsp stevia powder, and added just under a cup of chopped walnuts. Very sweet and bananay. :) I will make these again!

Slow Cooker Honey Garlic Chicken

This is a wonderful recipe! Very simple and gives the chicken a lovely flavor. I used crushed pineapple instead of chunks and ended up adding some sauteed diced onion toward the end to balance out all the pineapple bits floating around in my sauce, and I also threw in some sliced carrots to cook with the chicken. I cooked mine on Low for about 5-1/2 hours, then kicked it up to High for another 1/2 hour to get the carrots finished off. The only complaint I have, as mentioned by others, was that the sauce doesn't thicken much (you'd probably need to transfer the sauce to a pan and do it on the stovetop at a simmer), but I wasn't overly concerned with it and it wasn't worth losing a star over. ;) So it's closer to a broth, but still delicious!

Saucy Chicken and Asparagus

Pretty good. I added the cheese part way through cooking so it would melt in the oven, though should have waited till later as it got a bit dry on top. I didn't pre-cook the asparagus and they were just fine. My husband likes his meals "saucy" so it wasn't too much so.

Barbeque Beef Casserole

Very tasty, simple, and inexpensive! I halved this recipe (only had one lb of gr. beef to use) but I still used the whole green pepper because it needed to be used up, and I also used the full cans of corn and tomatoes because I didn't want to have 1/2 cans sitting in my fridge. Also I used the full 1/2 cup of BBQ sauce even in the half recipe since so many reviews said to double it, plus I didn't drain the tomatoes. Many people said there was too much cornbread, so in my half recipe I used only one package, but I think it could have used more so next time I'll likely use 2 packages. My picky husband liked it, and so did I. :)

Coconut Macaroon Brownies

These are pretty good, not quite what I envisioned, but not bad. I didn't bother trying to hunt down any unsweetened coconut and just used the regular sweetened kind. It's sweet, but it's dessert, right? I didn't make the brownie recipe listed but used a box mix instead, as a shortcut. I don't know if I'll make these again.

Cheesy Beef Macaroni

I used a box of shells & cheese instead of macaroni and Velveeta, exchanged cream of mushroom for the cream of chicken, exchanged a can of diced tomatoes for the corn, added a little cheddar, and topped it with some crushed stuffing mix. I also added half an onion to the meat while it was browning. Pretty good, a little "Helper"ish, but a step up I'll admit.
