Bacon for the Family or a Crowd

I have been doing this for years now, and not just when cooking for a crowd. I cook the bacon until almost done, drain completely, set on paper towels or waxed paper and roll up, storing in a ziploc in frig. Then, when I want bacon for breakfast, a BLT, or as a salad or recipe ingredient, i take what I want, zap it in the microwave, and in a matter of seconds it's ready, without stinking up the house with that "fried bacon" smell.

A-Maize-ing Corn Chowder

Corn chowder is a rather bland meal, but maybe that's why it is so comforting. My additions always include a cup of cheedar cheese and a few dashes of Franks red hot sauce. Serve with more cheese sprinkled on top.

Country Apple Dumplings

I decided I HAD to make these today for father's day, which I did. MMMMMMMMMMM delicious!! I used Empire apples instead of the Gran. Smith. Just as good. Next time I think I will add a little bit of finely chopped walnut either inside or sprinkled on top. I made real whipped cream, (you know, the old fashion way with heavy cream beaten) for the top. Oh, it is soooooo good. Excuse me. I must go rest while the sugar coma wears off.

Mozzarella Wedges

Brilliant!! I put parchment paper on the pizza pan first, and I added a few shakes of parmesan cheese. So good with spaghetti and meatballs and a salad.

Actually Delicious Turkey Burgers

These are good, but make them even better by adding a couple Tbs of apple jelly. Try it, you'll like it!! Nobody can ever guess what that slight sweetness is.

Coconut Custard Pie III

Creamy Au Gratin Potatoes

I just made these last night for Valentines dinner. Delicious. My husband even commented on them again this morning! I used a large vidalia onion and it was a lot, but sure was tasty. This is now in my recipe box!!!!

Autumn Cheesecake

Nice cheesecake, but as is we were disappointed that the cheese layer was so small, so next time I will increase the cheese mixture as others had recommended. I used apples that didn't soften much either, so be careful what kind of apple you choose. As another reviewer said, drizzle caramel topping on, a little bit of fresh whipped cream and you have perfection!!

Pretzel Salad

We all love this dessert, but am I the only one that adds mini marshmallows to the cream cheese layer? Fold in a cup or so of the mini marshmallows and it really adds something special.

Crumb Topping for Pies

Onion Pasta

I made this a few nights ago. We ate it, but I'm not sure I would make it again. The taste is good, and I did add some garlic, but it just seemed oily and heavy, even though I reduced the amount of oil. Good way to use up some of these Vidalias, but will stick with my usual garlic sauce on angel hair.

Turkey Stuffing Roll-Ups

This gets 5 stars just for easy prep, but it's good, too. I also use boxed stuffing and instead of using creamed soup I use a can/jar of turkey gravy. When I want to take it up a notch I spread cookes winter squash on the turkey slices before rolling with the dressing. Serve with a green vegie like beans or broccoli. This also travels well for a potluck.

Garbage Can Turkey

I've done this many times while camping through the summers. We have found that it doesn't seem to matter if it's hot out or cold and snowy. It always works out great. You should also try it with a couple chickens, one on top of the other, and reduce cook time to about 1 hour. Also good using a pork loin or eye of the round, again reducing cook time. Season to taste. Be careful when removing can. Ashes can blow around, especially on a windy day.

Penne with Garlicky Broccolini

Without a doubt this is now one of my favorites and I can't wait to make it for guests. We just finished devouring this and we all agree.....we would rather eat this at home than go to Olive Garden. I used a little extra garlic and used precooked bacon, so I was liberal with olive oil. I may sprinkle a few flakes of crushed red pepper on this next time, if it stays in the pan long enough!!

Creamed Tuna On Toast

This get 5 stars because it was a favorite childhood friday night supper. My mother always made the roux for a creamy white sauce instead of using creamed soup. We never had it on bread, rice, or potatoes. We had it on crushed potato chips!! Yes, try it before you scoff. It is delicious!!
