Romantic Chicken with Artichokes and Mushrooms
This recipe was not only easy to make, it solicited rave reviews from all who ate it! I used marinated artichoke bottoms instead, and added McCormick's (?) Spice Blend, the one with roasted red peppers and garlic. I served it with a salad, pita bread, and hummus. Ummmm.... Delish!

Cucumber And Yogurt Salad
I am totally impressed with this recipe! It tastes exactly like the cucumber and yogurt salad I've been served in many middle eastern restaurants. When I wrote up my shopping list, I neglected to write down how many cucumbers to purchase. As a result, I only bought two. The only change I made was to lighten up a bit on the mint, and it turned out just fine.

Port Wine Chocolate Cake
While this cake tasted great, I found that it was quite difficult to make. For one, even though I followed the directions to the letter, the cake didn't rise as much as I expected it should've. Secondly, the glaze turned out much too thin, so I added more chocolate and corn syrup to thicken it up enough for it to actually glaze the cake, instead of being soaked up by the cake. All in all, it tasted delicious, but be prepared to monkey a bit with the recipe.
