I'm the mother of two spirited little girls and I've been married to my long-time best friend, Matt, since 1995. Although we enjoy traveling to new places each year, my favorite times are just spent in the coziness of our house watching my girls play together and listening to Matt play his cello and classical guitar (www.triolumina.com). One of my favorite times of day is late afternoon. I crank up my fusion jazz music, pour a glass of red wine and create something (hopefully) wonderful for my family to eat for dinner. I love the simple pleasures of life, such as quiet time to curl up and read and gaze out my windows at the beautiful islands dotting the Puget Sound. I love where I live, and am thankful to God for our health, happiness and loving family. We are blessed!

Quinoa and Black Beans
Excellent! I discovered quinoa only about 2 years ago, and I love it. It's not only simple to cook, but it's also incredibly good for you. The light fluffy texture of this powerhouse of a grain is wonderful, but it does need some sprucing up in flavor, and this recipe does that perfectly.

Plum-Glazed Chicken Kabobs
We finally had a warm and sunny spring day here in the Pacific Northwest, and it inspired me to cook something with a tropical twist for dinner. These were perfect! Here's how I improvised this recipe with what I had on hand. Instead of plum jam, I used a cup of apricot jam and added a couple of tablespoons of apple jalapeno jelly for a slight hint of heat. Also, in order to make more sauce, I added 3/4 cups of water and pineapple juice drippings to an additional teaspoon of cornstarch. I served the kabobs over a bed of quinoa and had plenty of sauce to pour over all. It was gobbled up quickly!

Artichoke Spinach Lasagna
This recipe caught my eye because I love spinach. My husband who usually complains if I sneak a vegetarian meal in front of him thought it was excellent
