Blackberry Pie I

This pie is great! I was glad to see a recipe for a berry pie that didn't use cinnamon, etc. Pies should reflect the flavor of the berry and not added spices. You could use Ritz crackers and get the same flavor when spices overpower the fruit.-----I just hope that everyone has their own berry patch considering that a 3 oz. pkg. costs almost $4.

Biscuit Baking Mix

Did I miss something? This might be a great mix, can't tell. When you do want to use this mix, how much liquid do you add,is it drop or cut, what temperature oven,and what ratio mix to liquid is used. I could probably figure it out but it would be nice to know what the correct amounts are.

Lemon Square Bars

Very good! I lost my Lemon Bar recipe when my kids started raiding my recipes. This sounded similar so I tried it. The consistency was good and the flavor was too. The only problem I had (if you consider it a problem) was they wanted to kinda fall apart when I went to take them out of the pan. All I did was eat the first row, and put the pan in the refrigerator for a short time and they came out fine. I'd definitely make them again & not just for my Christmas tray. Would be great at Easter time too.

Pennsylvania Dutch Pickled Beets and Eggs

I like this recipe except I use less cloves and l bay leaf. It's great to have on hand being diabetic. There's always a quick protein around for me to grab when I feel a little low.

butter balls

This cookie is similar to a shortbread with walnuts. It's very good. My son Paul requested these for Christmas this year. I haven't made these for years but he remembered them from when he was little and said he "loved them".

Nana's Sugar Cookies

Nostalgic. My mom made these some 50 years ago. Cookies have a slight flavor of nutmeg. The first time I made these in the mid-sixties, I was shocked at how many they made! Cake-like with a slight sugar crust on top.

Light's sugar cookies

A very good, rolled sugar cookie. Needs to be cut with a 4"(or larger) cookie cutter. They are soft, not crunchy and have a good vanilla flavor. Cake like cookie.

chocolate crinkle cookies

Really, Really like-um. Great chocolate flavor with the cocoa. Soft, semi-chewy, not at all dry and very pretty with the powdered sugar since they crack on top as they bake exposing the solid chocolate center and the white contrast on the outside.

Anise Drops

I liked, but a little too crispy for me so I reduced the baking time to 10 min. I also didn't care for the large pieces of anise seed so I put it through a pepper grinder and used 1/2 Tbs. instead of 1 Tbs. The flavor was very mild, which I like.

coconut macaroons

I really liked this recipe that was right on the coconut bag. -The only thing I'd change is to put the coconut through the food processor prior to adding it to the recipe. I think the finer consistency would make the macaroon much better.

Sugarless Pumpkin Pie II

Quickly tried this recipe being diabetic. The pie needs to use a shallow pie plate. I had to double the recipe to fit in a deeper dish so the cooking time doubled. The pie itself was OK but lacked in sweetness even after adding an extra 1/3 cup of sugar. Family didn't like it but I found it did taste much better the next day. I'd probably try it again with 1/2 splenda and 1/2 sugar and a shallower pie pan.
