About this Cook
My favorite things to cook
I love baking...cookies, pies, and cakes. But, I enjoy cooking in general, especially when I'm not pressed for time. And lately, I'm enjoying trying new recipes that are unusual for me.
My favorite family cooking traditions
I love baking for the holidays! I love the way the house smells while baking the pies and cakes and other treats. Reminds me of holidays spent in my granny's kitchen helping her.
My cooking triumphs
My very first baking triumph was at 14 when I mastered the pound cake recipe my daddy brought home from his boss's cook. He gave it a shot...and pronounced his attempt a HUNDRED pound cake, lol. Then handed the recipe over to me to work at. His delight in my triumph was the beginning of my love of baking.
My cooking tragedies
Not long ago I decided I wanted to try a 'sloppy joe shephards pie'. I used Manwich and topped with mashed potatoes. Not good. I haven't even attempted to work on this one, lol.

Giant Chocolate Chip Cookie
I made this last Monday because we were craving cookies but I wasn't in the mood to go through the trouble of making pan after pan of individual cookies, and I had this recipe I wanted to try for family parties. My oldest son and husband absolutely loved this! My only problem was my fault...I used a round pizza pan smaller than the one suggested, and the cookie dough melted and expanded and overflowed the pan into my oven. I was guessing at the size pizza pan I had on hand, and was apparently off by a few inches! But, the mess was surprisingly easy to clean up and didn't affect the finished product at all. The cookie was soft and chewy and buttery. My husband said it would be perfect served warm with vanilla ice cream, and my son just keeps asking me to make it again. Thanks for the wonderful recipe!

Awesome and Easy Creamy Corn Casserole
I made this dish last night to go with fried tilapia filets and creamed spinach. We couldn't stop eating it. It was a little more dense than what I was expecting, based on other reviews...but very delicious regardless. I might try adding a little bit of baking powder next time just to see what happens. I will definitely be making this again. My husband is a huge corn fan.

Southern Sweet Potato Pie
This pie IS very sweet, but it's really good. I call this our candied yam pie, lol. My boys love it...and so do I, as I am a huge sweet potato fan. My husband, who isn't a fan, still eats this pie. Very good!
