Roasted Chicken Noodle Soup
I loved this soup! I made it low sodium (low sodium chicken stock, and very little salt) for my dad who's on a restricted diet, and that came out a little bland, but a little salt and pepper to the individual bowls of soup, and it was perfect! The only thing I did differently was using heavy cream instead of condensed milk. I didn't have any condensed milk, but had some leftover cream from another recipe. I also left out the potatoes because my dad's allergic, but I don't think the soup was missing them at all. In fact I think it could have become a bit to heavy with them. Perfect as it was though! Great Comfort food!

Chicken Pot Pie IX
This recipe was fantastic! The perfect cold weather comfort food. The only thing I did differently from the recipe was use already cooked chicken. I had baked some chicken to use in some other recipes, and just shredded up and boiled with the veggies as stated (I also used another reviewers suggestion and boiled the veggies and chicken in chicken stock instead of water). Everyone that tried this recipe loved it! My dad said it was the best chicken pot pie he's ever tasted -- and that's really saying something because he LOVES chicken pot pie!

Slow Cooker Chicken and Dumplings
I thought this was great with just a few minor changes. I added veggies (fresh carrots, green beans, celery, and frozen corn) to make it an easy one-dish meal, and added chicken stock instead of water. I used the dumpling recipe on the baking mix box (double batch) instead of refrigerator biscuits, just because that's what I had on hand. I also shredded the chicken around the same time that I added the dumplings (about 45 min. to 1 hour before serving). This was a delicious and unbelievably easy meal -- just dump it all in and leave it. Great comfort food on a cold day!
