Chocolate Zucchini Bread I
Very good. I sometimes use applesauce instead of oil. Also, I have found that the melted chocolate can be a bit tricky to stir into the mixture (it hardens on the spoon, spatula, etc. I add the oil (or applesauce) to the chocolate before mixing into the rest, and it works quite well.

Shrimp Cakes
I have made these 3 times since finding the recipe - and they are great! I have used italian seasoned breadcrumbs with perfect results. I also cut back on the mayo. As a dipping sauce, try mixing equal parts of dijon mustard, mayo, and green tomato relish - or pickle relish. YUM!

Chicken Pot Pie IX
This is fabulous! Most of the time I use leftover chicken/turkey, so I saute the celery and carrot with the onion so I can skip the whole boiling step. My nephew doesn't like a lot of crust, so I just use the top crust, and it still rocks!
