Mid-Summer Italian Bread Salad
I loved this! As others have suggested, it's nice to toast the bread cubes before adding them to the salad. I added some buffalo motz to mine--yum!!

Scalloped Tomatoes
This recipe is delicious. The brown sugar plus the tartness and acidity of the tomatoes are wonderful. Tip: Don't cover this dish when you bake it--the bread will be firmer and not so mushy if you leave the dish uncovered. I also add shredded motzarella cheese on top during the last 10 mins of baking. So good!!

Mom's Brussels Sprouts
After a disastrous attempt at adding brussels sprouts to a pasta dish, I didn't think I'd ever be able to eat them again, but this recipe was delicious. I mixed the brown sugar in water because some people reported having problems with mixing the sugar in the butter. I also subsituted raisins and goat cheese for the walnuts and they were very good.
