Light, Crisp Waffles

these were quite tasty. i used 1 T vinegar in place of 1 T milk as i didn't have buttermilk. it seemed that what ultimately made these crispy was putting them in the 200 deg oven. i would think i could achieve the same result using a less time intensive recipe.

All Day Apple Butter

Very tasty! I used a food processor to finely chop the apples and then a blender at the end to get the apple butter smooth. As others have posted, it took about 6 hours of uncovered cooking at the end to get it to the right consistency. This yielded 3 pints, plus a little to eat right away.

Buttermilk Biscuits I

This is a good basic biscuit recipe. As other people have posted, I added 2 tsp. of salt and 2 tsp. of baking powder to all-purpose flour instead of using self-rising flour. I also used butter in place of the shortening. I froze about 2/3 of the biscuits before baking, so hopefully they turn out as nice as the fresh ones!

Dill Pickles

We just cracked open our first jar...after 8 long weeks, lol. They are pretty good. I find them a bit salty, so we will cut back on that next time. They are not Claussen pickle crunchy, but they are crisp. I'd definitely make these again. Btw, we did not do the hot water bath with these. It took them a long time to seal, but they eventually did.

Melt In Your Mouth Blueberry Cake

I love this cake! It reminds me of a blueberry muffin. I baked it in an angel food cake pan but it wasn't enough batter to really fill it. Next time I will try doubling the recipe.

Awesome Egg Rolls

I'm amazed at how easy these were to make. I don't like shrimp, so I substituted 4 oz of cooked ground chicken. We fried them and ate them with duck sauce, and they were great. I tried baking some, too-- I don't recommend it as the wrapper just became tough and chewy. I didn't cook all of the egg rolls right away so i put them in the fridge to make the next day, and the wrappers became soggy and gooey. I recommend cooking all the egg rolls at once and then refrigerate and reheat the leftovers.

Baked Doughnuts

I was disappointed with these. The only change I made was to add 1 T of white vinegar to regular milk in place of the buttermilk. Although the taste of the nutmeg came through pretty strong, I still found these to be bland. After taking them out of the oven, I topped half with cinnamon and sugar and half with a chocolate glaze. Overall, they were just ok-- nothing special. Maybe the buttermilk makes all the difference?

i substituted applesauce for the oil and lemon extract for the vanilla extract. it was a good dense bread with good flavor. i'd make it again, but i'm still on the hunt for the ultimate zucchini bread recipe.

Rich Chocolate Frosting

excellent! i took one reviewer's suggestion and added a 2-3 extra tbsp of milk to make it easier to spread. i halved the recipe and had enough frosting to ice the sides of a 2 layer cake and 12 cupcakes and have a ton leftover.

Exquisite Pizza Sauce

very tasty! it's spicy and sweet at the same time. based on someone else's review that the recipe didn't yield much, i made a double batch for my pizza. i only used half of what i made and will freeze the rest. i would say that a single batch is the perfect amount to cover a large pizza.
