Brooklyn Girl's Penne Arrabiata
I really understand why this received so many good reviews. This was very time consuming and wasn't worth the effort, time, and clean up. I added one full teaspoon of the chilli paste - used paste instead of flakes - and it was definitely spicy but it's a good thing because the recipe was so bland otherwise. I also added sliced mushrooms which added some depth but it's the chopped tomatoes that really ruin this recipe. Tomato sauce would have been a better choice especially will pasta like penne which lacks flavor and needs something more moist to add to it. I also added soy cheese but even that couldn't save this recipe. The breaded chicken is a good idea but served on the side, not in the pasta. I won't make this again. My husband wasn't a fan and I couldn't eat it so it was a waste for us.

Luau Chicken Sandwiches
I thought this was just OK. I didn't have a grill so I pan fried the chicken and poured the marinade over it after marinating the chicken all day. I cooked the chicken for four minutes on each side and it came out tender but I didn't taste any of the marinade which was a shame. I pan fried the pineaple ring first which really was all that I tasted on this sandwich. Also, the roll I used was too small for a large, thick piece of chicken. I would flatten the chicken before marinating next time and cut it in half, and use a heartier bread that is larger. My husband enjoyed this sandwich more than I did but he, too, found it difficult to eat because of the size. I served it with an artichoke dip & pita chips which went over better than the actual sandwich.

Lower Fat Banana Bread I
I added walnuts, cinnamon & vanilla but this was still quite plain and a bit boring. Next time I'll add reduced fat cream cheese, and more bananas.
