Jamie's Cranberry Spinach Salad

This salad is sooo good. I make a few changes that I really like. I add candied walnuts instead of the almonds and I top it with some Gorgonzola cheese. I just made this for a family gathering and everyone raved about it. I also buy the baby spinach in the bag and it makes it all the easier.

Funeral Potatoes

This is yummy. My famaily loves this. You need more potatoes though. Use 4 lbs. Freeze the leftovers if you have to.

Marshmallow Fudge Bars

These are great!! With a cup of butter I don't see how the other reviewers thought they were dry. Anyway, it helps to make sure the marshmallow layer is completely cool before you spread on your frosting. I popped mine in the freezer for a bit. I actually made a double batch of the frosting and that gave a nice thick layer of chocolate on top. Yummy. Don't worry about measuring the marshmallows exactly. Just a nice covering on top is enough.

Easy Cheese Ball II

I had never made a cheese ball before and this one was a winner. My company loved it. I followed the advice of others and added some bacon bits. Next time I might try adding a little green onion as well. Even my kids liked it.

Cranberry Pork Roast

This is a great recipe. I cooked a 6lb roast so I doubled the recipe. I followed the advice of others and added just 1/4 cup of brown sugar and chicken broth instead of the juice. My company loved it and raved about the gravy.

Seafood Lasagna II

This was good although, like others have said it is very runny. I think next time I will just layer the cheese mixture with the noodles and then pour the soup and wine sauce over the top of that. I will also cut the milk and wine in half and I think that would be plenty of sauce.

Firecracker Grilled Alaska Salmon

This was great. A nice change from the lemon pepper I usually put on salmon. Although, a little too much soy sauce for me. Hubby and kids ate it up.

Mango Salsa Salmon

This was yummy and oh so easy. Next time though I will cut down the amount of onion. I actually used it on the Firecracker Salmon. Made a very nice meal.

Baked Mashed Potatoes

This was really good. I made this for Easter dinner at my inlaws and it was a hit. I thought it tasted just a bit dry though. Next time I might try adding just a bit of sour cream.

Brown Sugar Chocolate Crackle Cookies

These cookies turned out great for me. They were very soft coming out of the oven, but I had no trouble moving them to the racks. The flavor and texture were wonderful. I just put the dough in the freezer for about 45 minutes befor baking. I made these for my 7 year old daughter's piano recital and they were a big hit with the kids and parents alike. I will make many more batches of these yummy cookies.

Beef Tips and Noodles

This is a great recipe. I have made this several times and it is always a hit. I usually just dump everything in the slow cooker and let it go all day--makes the meat nice and tender.
