Fluffy White Frosting

WOW! This was wonderful! I made it exactly as written, and it turned out fantastic. It went perfectly with my lemon cake (which, I might add, wasn't anything special - just a mix). It fluffed up so beautifully, and held it's shape without needing to be refrigerated. Thank you for posting!

Black Bean and Corn Quesadillas

YUM!! Everyone in my house gobbled these up! The only thing I changed was I omitted the onions. I've been trying to find good vegetarian meals, as we eat them twice a week. Thank you for posting - I will definitely be making these again!

Oh my goodness! This cake is wonderful! I only made one change, and that is I used water instead of liqueur. It is SO moist and rich... YUM! I will definitely make again!

Heavenly White Cake

This cake is just OK. It has a great flavor, but is VERY dense. I mean, really dense! I made it exactly how it's written, and am really disappointed. For the amount of work that goes into it, to me it isn't at all impressive. Sorry, but I won't be making this again :(.

Shrimp Scampi Bake

An excellent recipe! I used frozen shrimp, and added a bit more garlic, then baked it at 450 for about 15 mintues. Delicious! Both my boys, 5 and 2 1/2, had two servings each. Now, in my house that's really saying something! Thanks for the post!

Mom's Zucchini Bread

Very good zucchini bread! I did change the recipe some, though. First, I doubled it. I used half all-purpose flour and half whole wheat flour. I used 1 1/2 c. brown sugar and 1 1/2 c. white sugar. Replaced all of the oil with applesauce, and omitted the walnuts. This turned out very well! Very moist and very good for you!

Classic Bran Muffins

These are wonderful! I love bran muffins, but this is the first time I've ever tried to make my own. I wanted to make them as healthy as I could, so I altered the recipe a bit. I also doubled the recipe. The alterations are as follows: I replaced the buttermilk with 1% milk and 2 T. lemon juice (don't forget to let stand for 5 minutes); I replaced half the brown sugar with honey; omitted the vanilla and raisins (just personal preference) added 2/3 c. flax seed meal; replaced the oil with applesauce; and used all whole wheat flour. After baking, I brushed the top of each muffin with honey. Sooooo good and good for you, too!!!!

Grilled Salmon I

This was very good! I just eye-balled the ingredients, and it was fantastic. I didn't grill it, though, I baked it at 450 degrees for about 16 minutes. I didn't even flip the fillets over, and they turned out wonderful. The flavor is perfect, and I can't wait to try it on chicken! Thanks for the post!

Alfredo Mostaccioli

This was pretty good. I do have some issues with it, though. It doesn't make much sauce, for one. I think it needs to make about 2/3 cup more alfredo sauce, at least. Two, the sauce isn't very cheesy. Instead of 1/2 cup parmesan, next time I will use about 1 cup mixed cheeses (like the Italian Blend that Kraft makes). Other than than, the flavor is very good.

Chantal's New York Cheesecake

WOW! What an incredible cheesecake! I've only made two cheesecakes in my LIFE, and this was the best I've ever tasted. The only thing I will do differently next time is let it bake for another maybe 5 minutes; the middle was still a bit on the runny side with only 60 minutes. I wrapped the well-greased springform pan twice in tin foil, and then placed it in 1 inch of HOT water before putting it in the oven. Then, after it was finished baking, I took a greased knife and ran it between the pan and the edge of the cake. Lastly, I closed the oven door and turned it off, and let the cheesecake sit in the oven in the water bath for about 3 or 4 hours, cooling. I can't believe how great those tips were! The texture was perfect, there were absolutely NO cracks, and it was a beautiful golden brown. Oh, I also made sure that I didn't overmix the batter. I only mixed it just enough to incorporate the ingredients. I think it's easier not to overmix if you mix by hand, not with a mixer. This is definitely something I'll be making again! To Die For Blueberry Muffins

Just took these out of the oven, and have already tried one!! They are FABULOUS! Since I didn't want them too sweet, I made a few modifications, after reading some reviews. First, I doubled the recipe; this made 16 large-size muffins. Second, I used half whole wheat flour and half white. Third, I used buttermilk instead of regular milk (2/3 c. plus 3 tbsp., if you are doubling it). Next, I replaced the oil with no-sugar-added applesauce, and also added 2 tsp. vanilla. Then, I added fresh blueberries, filled the muffin cups almost to the top, omitted the crumb topping, and baked them at 400 degrees for 24 minutes. They came out just perfect! Works well as a healthy breakfast or snack anytime! Thank you for posting!

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are amazing. However, I only gave 4 stars because I think the cook time is off. I would not bake these any longer than 14 minutes. Especially if you like soft and chewy cookies (like me!), you definitely don't want to overbake. The recipe seems pretty resilliant, too; I used salted butter and also added the 1/2 tsp. salt. Even still, they turned out just perfect! Also, to keep them soft, store in an air-tight container with a slice of bread. This will keep them soft for days. Thanks for posting!

Cracked Sugar Cookies I

These are absolutely the BEST sugar cookies I've ever made!! I chose the recipe because I didn't have to chill the dough, so it was less time consuming. I made no changes, baked them for 10 minutes, and they came out PERFECT!! My search for the best sugar cookie recipe is finally over!
