Cornish Game Hens with Garlic and Rosemary

Absurdly delicious! I ended up using one hen for two people, but kept the liquid amounts the same. I stuffed two sprigs of rosemary inside along with only two cloves of garlic instead of the large number of cloves outside of the hen. I roasted some potatoes in a separate pan as a side dish. What a wonderful dish!

Coconut Tofu Keema

I'm glad I read the reviews beforehand--I made a few substitutions. Instead of using so much tomato sauce, I found that a can of diced tomatoes and a tablespoon of tomato paste worked quite well. I reduced the oil to 2 tablespoons and used lite coconut milk to cut down on the fat content. It was quite tasty!

Tomato-Curry Lentil Stew

Easy, tasty, and filling! I made some substitutions--I used broth instead of water, a full onion instead of 1/8th of one, carrots instead of celery, and a can of diced tomatoes instead of stewed tomatoes. I sauteed the onion, garlic, and carrots until the onion softened before adding the rest of the ingredients. I also increased the amount of curry to around 1 teaspoon, because I love anything curry-flavored.

Fish Chowder

Incredibly flavorful and hearty. I used haddock instead of cod, ommitted the mushrooms and chopped up an additional stalk of celery. I served this with slabs of Irish soda bread for a very filling lunch!

Burgundy Pork Tenderloin

Although this was very easy, I would make a few recommendations. My husband found the sauce to be overwhelmingly wine-y, so I would substitute one cup of wine with one cup of beef broth. Also--make sure that the liquids are warmed up, otherwise the gravy mix takes a while to come together in the pan. I would definitely recommend searing the tenderloin before putting it in the oven.
