Baked Teriyaki Chicken

This came out delicious. I followed the recipe almost exactly. Just reduced to 2 servings, left skin on chicken, and reduced sugar. I thought the sauce tasted like something you would eat at a restaurant.

Creamy Zucchini Soup

I loved this soup. It can be a meal all on its own. I did add a chicken thigh and carrot to it with the broth and blended it altogether at the end.

Mini Sweet Potato Samosas

I love samosas and being Indian I can make samosas. When I saw this recipe, I thought this was be great. It wasn't. I don't think sweet potatoes mesh well with the curry. I did save some of the sweet potato and mixed it with brown sugar and cinnamon and made mini samosas with it. That came out really good!

Honey Baked Chicken II

This came out better than I expected. I tasted the marinade before pouring it over the chicken and I wasn't sure if it would come out good. It was very easy and quick to make...only marinated it for about an hour. My boyfriend really enjoyed it and he hates curry! (I didn't tell him there was curry in it though.)

Date Nut Loaf Cake

This came out really good! I did not make the warm sauce but I don't think it needed it. I did cut the sugar down to 2/3 cup. I also added 1/4 cup of flax meal in place of part of the flour. This would make a great breakfast loaf. Also, I cooked it for 50 minutes, any longer and it would taste burnt.

This chicken was delicious! I gave it four stars only because I thought it tasted a little too tomato saucy. Next time I will use less ketchup. I also did not have as much gravy as I would have liked. Maybe I will add more pineapple juice next time so I have more gravy.

Calamari in Red Wine and Tomato Sauce

This came out very good. The only change I made was adding a can of diced tomatoes as It didn't look like there would be enough sauce for the calamari. I served it over rice noodles. I thought the recipe asked for way too much cayenne although I did use less than what the recipe called for. I cooked the calamari for about 10 minutes and it came out perfect. Don't cook it for any longer as it might get rubbery.

Beef Pot Roast

This was the first time I made pot roast and this is the perfect recipe. I made this recipe twice. The first time I followed it exactly. After I took the meat out, I added some red wine to the gravy and cooked it. It came out really good but the gravy had a strong onion flavor which some people may not like. The meat was also a little tough. The second time I made it, I added some water before I put it in the oven. The meat was so tender this way! I still added red wine to the gravy and some cornstarch to thicken. I definitely suggest adding some liquid before puting the roast in the oven.

Easy Sour Cream Cheesecake

This was one of the best cheesecakes I have eaten. I did halve the recipe and put into individual custard dishes and baked for 25 minutes. Very moist and creamy.

Lentil Chili

This chile was just okay the night I made it. But the following day, it was perfect. The only change I made was I used 1 cup of lentils instead of 2. I suggest making this recipe a day ahead because it was really delicious the next day.

Artichoke Spinach Dip

I halved the recipe. It came out so good!!! The best spinach artichoke dip I have had. Didn't have chips so I made some naan and cut it into small pieces to dip into it. This would be a great appetizer to serve for company.

Rich Chocolate Brownies

I made this recipe twice. The first time I made it gluten free by using white rice flour instead of all purpose and I added 1/2 tsp of xanthan gum. I came out delicious. The second time I added chocolate chips and doubled the recipe. I did not use icing. This has become a favorite and easy brownie recipe.

Conch Fritters

This came out better than restaurant conch fritters!! I made a couple of changes, I used 1/4 cup corn flour and 1/2 cup all purpose flour, used 2 cups of conch (be sure to chop them up real small, I chopped them up too big), omitted onion and bell pepper. This came out so good. I can't wait to cook them for company.
