Crispy Barbequed Tofu Slices

If I could give this 10 stars, I would. I've been a non-tofu enjoying veggi for about 15 years. I'm always hopeful when I find a recipe that could disguise it's "tofu-ness". This was AMAZING. My husband ate the entire plate, minus the 3 I quickly grabbed before he inhaled them. My 3 year old LOVED them (he managed to get 1). I baked the tofu after I brought it out of the freezer as was suggested. I will make these over and over and over... THANK YOU!!

Vegetarian Quiche

So impressed with the flavors. The curry and cinnamon are amazing, subtle yet flavorful. I added more spices (garlic salt, onion powder, paprika). Also added a bit of sour cream with the cheese for a richer flavor. Smelled so good, I went ahead and made one for the freezer! Really delicious!!

Cheesy Sausage Zucchini Casserole

Even got the kids to try it!! Made a few changes. I doubled the rice and used 1/2 brown. Added Sazon seasoning from Goya to that. In a pan I sauteed onion and garlic and added tomatoes. Then I substituted broccoli (didn't have zucchini in the house!!)and cut up some fresh mushrooms really small (kids again). Threw in veggi chorizo and used both fresh chedder and the mexican velveeta (about half). To be honost, I had bought the velveeta at a buy one get one free (hadn't tasted it in years) and was thrilled to find a recipe to use it since I discovered I no longer liked it. It was GREAT in this recipe. I really suggest keeping it in. I put the rice layer on the bottom, and put the chorizo layer on top of that in the casserole dish rather than mixing it all together. I added the fresh cheese on top and baked for like 15-20 minutes (until the cheese melted and I could get everyone at the table). It was fantastic. Even better the next day. This recipe inspired me to plant some zucchini's in the garden the next day. Can't wait to try it out with them. Thanks!!!

Vegetarian Bean Curry

This recipie had a good flavor, although I had to add a little more curry powder than called for, prob since I added a few cut boiled potatoes. Also, I chopped up some carrots and let the curry simmer with about half a can of coconut milk. I only needed one can of tomatoes for the flavor I wanted. Also, I didn't have just golden raisins, so I threw in a mix of the golden raisins, dried cherries, dried blueberries, and dried cranberries. I liked it!!

Seven Layer Tortilla Pie

The flavor was great, but my bottom layer of tortillas were a bit soggy. I had even precooked them as others had suggested. It may have been my fault, as I added rotel instead of the tomatoes and also substituted the black beans for chili beans and the pinto beans for refried black beans. Actually, I only used one can of the chili beans. Also I added fresh sweet minced onion on top of each refried bean layer (what should have been the pinto beans)before adding cheese. On top of each chili bean layer (what should have been the black bean layer) I addded enchilada sauce, and also on top of the whole thing. That may have been the cause for my sogginess, I just didn't want it to be too dry. However, when I reheated them the next day in the toaster oven, it seemed to clear up the sogginess. They reheat really well as long as you have already pre-cut the pieces. Very pretty!!!

Best Spaghetti Sauce in the World

Very tasty. Made a few alterations, but that's being a veggie. First, I sauted some onions with the garlic. Also, I used veggie stock instead of chicken, and I skipped the dry vermouth. Very nice flavor, and fresh basil is always such a pleasure. Thanks for the recipe.

Brussels Sprouts with Mushrooms

Very good. After reading some other reviews, I also added garlic, veggi bacon, and onion to the butter (and olive oil mixture). It was really good, especially since I am not a brussel sprout fan. My husband practically licked the serving bowl clean, although my kids wouldn't even touch it. They were mortally offended that I added sprouts AND mushrooms to their dinner plate. Oh well, what can you expect? =)

Peanut Noodles

Really tasty and great "comfort food" (kind of sweet). I didn't have ginger on hand, but it prob would have been great. I added a small can of manderin oranges with the juice and served with just a little bit of coconut. Yummy!
