About this Cook
I'm a vegetarian, and raising my kids this way. Ultimately it is their decision, but they will know the facts first. I love to cook, sometimes. When I'm in the mood I go for it. I rarely follow a direction completely,and I tend to have bursts of insight, although it doesn't always go well!!
My favorite things to cook
I love to cook everything, and have only just started baking. I've been having a great time with cookies and rolls and brownies. I'm hoping this interest will eventually help me appreciate tofu, as I have to be completely in the mood for it and it has to be cooked a certain way.
My favorite family cooking traditions
We have none. My mom never really liked cooking, so I left the house unable to make an eggsalad sandwich.
My cooking triumphs
Hmmmm...When my husband surreptitously fills his plate several times with a dish I didn't think he'd like. I feel like a gold champion when we run out of dinner and my husband and sons ask for more.
My cooking tragedies
Several. Especially when things are going great, until I screw it up by adding something totally wrong last minute. I am a cook of impulse.

Spanish Rice Bake
Sorry to say this wasn't as good as I'd hoped. My rice didn't cook very well, even though I'd kept the dutch oven on med-low (the low end) without opening the lid. It could have used more liquid as well. I was hoping for a better result, but you can't win them all. I suppose the leftovers might be good as an omelette filling.

White Chocolate Raspberry Cheesecake
Being a cheescake novice, I managed to impress all who tasted my creation. I used blackberry preserves heated in the microwave to save a step, and could have turned off the oven 15 minutes before baking time. It browned a little, and after I turned off the oven, I kept it in to cool down about an hour. Was AMAZING... but def a "special occasion" thing (my hips say)... Thanks

Blueberry Cream Muffins
Delicious. I only made a couple adjustments, basically due to ingredients I had on hand. I used half sour cream, and half vanilla yogurt (which actually tasted awesome). I also used half white sugar and half brown. Also half oil, and half applesauce (just couldn't do it). I think I used one extra cup of blueberries, and I sprinkled the top of the muffins with a sugar/cinnamon mixture before I baked them. These were TOTALLY AWESOME. I'm going to bake more for school lunches now!!
