Rice and Raisin Breakfast Pudding

Yum! I was looking for some sort of rice pudding to make with my brown rice leftovers- this is tasty!!! I didn't have cardamom so made it without, and even used fake maple syrup but it tastes delicious and smells up the house with wonderful yumminess. Great crunchy almond chunks. Love it!

Pueblo Green Chile Stew

Yum! Mine turned out a little too spicy for my kiddos, I don't know if it's because I used fresh roasted chile peppers, or if it's because I subbed a can of Rotel diced tomatoes with chile peppers instead of the fresh tomatoes- I think it was probably the later. But my husband and I LOVED this! Make sure to watch the pot- all of the broth will evaporate and you'll end up with a smoky, burnt flavor if you're not careful. :) We served over rice then, or added more liquid and reheated as soup for several meals. Thanks!

Erin's Indonesian Chicken

yum- I also added red bell pepper - the sauce gets very creamy and delicious- I used brown rice which adds to the creaminess. Cilantro makes a great addition and fresh topping. The kids and kids' friend all thought this was great- as did hubby.

Avocado Tacos

Really good! I didn't mash the avocadoes, just cubed them- included some lime juice, and a 1/2 a roma tomato finely chopped. They were delicious- husband and kids enjoyed them too!

Spicy Sweet Potato Soup

Yum! I loved this- I had a flop of sweet potato fries recipe earlier this week, so I got to use up those uneaten fries in this recipe. I loved the warmth and depth of it. I added a can of black beans for more texture (just before ladling into the bowls). The cilantro on top is great!

Chicken Long Rice Soup

Thanks for this idea! We recently went vegetarian and I was looking for something to make with bok choy and rice vermicelli. I ended up simmering the bok choy in some water with fresh ginger and garlic in it. I added three diced green onions, some chopped cilantro, and then mixed in a peanut sauce (peanut butter, soy sauce, chili garlic sauce, and hoisin). I threw in some textured vegetable protein (TVP) to thicken it up and served it over warmed (cooked) rice vermicelli. It was a hit. I know this is nothing like your recipe really, but thought I'd add the comment so someone else might get creative too! :)

Chunky Peach Spread

Yum- thanks for this. We were using up fresh peaches from our tree. I used splenda in lieu of sugar and threw it in the fridge for an easy waffle/pancake/toast spread. Delish! Thanks!

Figs and Toasted Almonds Brie

These were great after initially not liking this. But, I stuck with it and reread some of the reviews to see what I needed to do to make it better. 1) Don't eat it with heavy crackers like Wasa- it messes up the flavor combination. We used Honey Butter Ritz and that was much better. 2) Next time I'll chop up the figs because they hold together too much in just quarters and it's hard to spread on a cracker without getting a huge glob of fig. 3) Be sure to cook the figs, sugar, water, vanilla combo long enough to get it think and goopy. It needs to blend well with each other. Very exotic tasting and fancy! We had it with Salmon and Wild Rice and it was a fabulous meal!

Slow Cooker Carnitas

Awesome! So easy- it has a sweet, cinnamony flavor so some might need to add a kick to it, but I loved it and so did my kids. I used water in lieu of chicken broth since I didn't want to run to the store and it was still amazing. Thanks!

Barb's Curried Mango-Avocado Salad

Yum! I'm not a big curry fan, but this was awesome! Great flavor combinations- very smooth texture- we had it as a side with enchiladas and rice, but I was envisioning many other ways to eat it- it'd be a great dip for quesadillas if you mashed it, great on chips, awesome on hot rice.... Thanks!!!

Vietnamese Fresh Spring Rolls

Yum! I love these at the restaurants and was very happy with how they turned out! We used firm tofu slices instead of shrimp, and next time I'd cut back the portion of mint a bit. But, the FRESH herbs were delightful and I love the texture of the rice vermicelli (rice sticks in our grocery story) and the wraps. Yum. Thanks!

Whole Grain Waffles

Yum! I looked up a recipe 20 minutes ago because it's hot and I didn't really want to cook, and I've already eaten my first waffle! I substituted plain yogurt for the applesauce and omitted the wheat germ and they were still delicious- very filling AND tasty. I will definitely make again! Thanks!

Asian Lettuce Wraps

Excellent- my husband raves about these and the kids love them too. I was intrigued with the tofu idea (never having cooked with it much before), so I omitted the meat and just used the tofu- I also added some chopped peanuts because I love them. I doubled the sauce as recommended on other reviews and it was a great, vegan & vegetarian friendly recipe. We will use this one often!
