Cranberry Pistachio Biscotti
This is the first time I've ever made biscotti, and it was really fun and easy. The cookie is absolutely delicious, and everyone in my family loved it. I used an ice cream scooper (the kind with a trigger) to transfer the dough onto the parchment paper, making two 12" rows. I then dampened my hands with cool water and shaped the balls into logs. This was much easier than trying to manipulate the dough completely by hand. Thank you for sharing this recipe. I can't wait to make it again, especially at Xmas time.
