Plain Cake Doughnuts

Oh my! These were super quick and SO delicious! I just rolled them in cinnamon/sugar after frying. Next time I will get more creative with frostings...maybe a chocolate genache or something!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I altered the recipe to what I had on hand and to make it even healthier. 1 egg, 1/4 cup flax meal + 2 tbls water, 1/4 cup applesauce, 1/2 cup brown sugar, 1/4 cup non-fat sour cream, 1/2 cup non-fat vanilla yogurt,1/2 cup oatmeal and a dash of nutmeg as well. I also used frozen mixed berries instead of strawberries. These were delicious with the changes we made, although I am sure they would be great without the changes.

Asian Ginger Dressing

Yummy! My husband loved it!! I used it on a cold, whole grain spaghetti salad loaded with diced chicken and veggies. It was great with the addition of green onions and toasted sesame seeds!

Rhubarb Crunch

I opted to use 6 cups as 3 is way too little. The amount of topping is very generous so upping the rhubarb was a great tip. I made this for a BBQ and it was literally gone in 5 minutes! The kids loved it.

Tangy Pear and Blue Cheese Salad

Pretty good. The sweet and tangy goes well with the nuts and sharp flavor of good blue cheese. I used 1/2 cup agave nectar in place of sugar and also used balsamic vinegar only because I prefer the flavor over white vinegar. I also used olive oil instead of canola....again for flavor. This does make a HUGE batch of dressing, but I will used it to marinate chicken or fish with too!

Creamy Rice Pudding

Pretty darn good! I finished mine up in the rice cooker after cooking the rice and it turned out perfect. I did add cinnamon in with the last egg/milk addition. The kids loved it...probably because I don't cook white rice! I will however try it with my short grain brown next time.

Fish Tacos

I can really only rate the sauce for this recipe. The only change I made was adding a little salt and cilantro. I blended it in the food processor to maintain a smooth consistency, which I think is better. The sauce definitely has a kick with both jalapeno and cayenne pepper...but I like spicy food. I think next time I would cut down the amount of lime juice. I used fat free yogurt and light mayo and it turned out ok. It is not exactly like the white sauce on the fish tacos in San Diego...but decent enough. It made for a yummy fish taco! For the fish, I used Old Bay Blackened seasoning which gave the fish a tasty kick too. Top it with cabbage and homemade pico de gallo and you are ready to go.

Spaetzle I

Very good recipe. I let my dough rest for 2 hours and then pressed through a spaetzle press. It is definitely a serious upper body work out to get the dough through the small holes!! I added nutmeg to the dough too.

Casa Dressing

I am giving it 4 stars because of the changes I made. I thought it needed more flavor so I added more cumin, some taco seasoning, 1/4 chopped fresh jalepeno and cayanne pepper. I also used buttermilk in replacement of the milk and juiced a whole small lime.

Fluffy Whole Wheat Biscuits

I followed another review and used all whole wheat flour, olive oil and buttermilk in replacement. I also added 1/2 tsp of baking soda. They taste great! Next time I roll them to 1 inch so they raise higher.

Belles Hamburger Buns

I used 1/2 whole wheat and 1/2 AP flour. I proofed the yeast with the 115 degree milk mixture and then added the flour. My first rise was great, but the final rise was not that great. They cooked up nicely, but a little too flat. Fairly dense with whole wheat, but stood up to sloppy joes nicely.

Sloppy Joes

This is a good base recipe. I always improvise and alter recipes...that's my nature! I added chopped yellow and red peppers, chopped carrots, celery and tomatoes. I would omit the vinegar and also the brown sugar. The BBQ sauce added enough sweetness. I also made it with ground turkey.

Cheddar Biscuits

These were great! The whole family loved them. I added 2 Tbls ground flax to Trader Joe's multigrain pancake/baking mix. I did add 1 egg per the biscuit recipe on the box. Fresh chopped chives were awesome in it.

Whole Wheat Bread III

This bread was excellent! I used the KitchenAid and oven method. I scalded the milk, added the butter, then let it sit until it reached 110 degrees. Then added to the yeast to the mixing bowl and let it set for about 8 minutes until frothy, adding the remaining ingredients (salt last). I did add ground flax and an oatmeal/barley mixture. I will use olive oil next in place of the butter.

Scallops with White Wine Sauce II
