Lime Chicken Soft Tacos

Reviewed: Sep. 17, 2009
Fantastic recipe! I threw the chicken, red onion, an anaheim chile, and the sauce (doubled the sauce) in the crock pot for a few hours, then shredded the chicken and added a can of black beans, heated it through and served it with fresh garden salsa on tortillas. I will definitely be making this again soon. Thanks!

Chocolate Wave Zucchini Bread

Reviewed: Jul. 22, 2009
Wow! This was fantastic! I made a double batch, had a little batter left over and made six muffins....I barely let the muffins cool before I had to try one, they smelled soooo good! And the flavor didn't disappoint! This recipe is delicious! I did make a couple of changes for healthiness points: used applesauce instead of shortening, 100% white whole wheat flour (from trader joes), dark chocolate chocolate chips, and an extra cup of zucchini. I will definitely make this again! Thanks for the recipe!!!

Chiles Rellenos Pie

Reviewed: Jul. 10, 2009
this is a great recipe! bought fresh poblanos and roasted them...(thanks for the tip on putting them in the bag to steam off the skin!) when constructing the "pie" I put chiles on the bottom, cheese, chicken, more chiles, more cheese, then poured the egg over top. my husband said this may be his favorite thing I've ever made! Thanks!

Fish Tacos

Reviewed: Jul. 10, 2009
this is sooooo good! The only thing I do differently is saute the fish with a little pepper in butter, garlic, and lime juice until it flakes easily (no breading)....we absolutely love these tacos! The sauce is the kicker, I've used sour cream instead of yogurt and it's fantastic! I also like to use a bag of shredded angel hair cabbage....makes it even easier.:)

Grilled Chicken Skewers with Mango and Pineapple

Reviewed: May 20, 2009
YUM!!! I've made this twice now. I didn't care for the mango the first time I made it, so this time I used all pineapple. Also used freshly made ranch 'cause I think bottled ranch is gross.:) Definitely worth making, especially when these norcal days reach the triple digits and cooking indoors is out of the question!

Great cookies!!!! I used butter instead of shortening and a mix of semi-sweet and white chocolate chips. They were still moist and tasty a week after I made them! Also gave the recipe to my sister and she made them with dark chocolate chips and pecans. YUM!!!!!!!!

Fantastic and super easy! I used homemade pesto, vegetable broth, whole grain pasta, small white beans, and fresh tomatoes. Served it with garlic bread and a salad. It was so good I ate leftovers for breakfast!:) I'm sure I'll be making this again soon.

for my first attempt at indian food, i thought this was amazing. next time i might cut down on the ginger, it seemed a little strong to me. i did cut down a bit on the cayenne and the spiciness was perfect!
