Chocolate Chocolate Chip Nut Muffins

Very moist. I did not change the recipe except I used dark cocoa instead of regular (I'm a huge fan of dark chocolate) and left out the nuts (I'm not a fan of nuts at all). I made 12 regular size muffins and still had tons left so I had to make a pan of mini muffins as well. Very yummy. I gave it only 4 stars because they stuck to my non-stick pan which I even sprayed with Pam. All the chocolate chips sunk to the bottom of the muffins and that is why they stuck. Definitely use muffin papers if you make these.

Beer Biscuits

I was very disappointed with this recipe's taste and consistency. My boyfriend would have beer with or in every meal if possible, he LOVES the flavor of beer. Personally I don't but I thought I would give this a try for him. The taste was so bad that he only ate one and I only ate half of one and we threw the rest away. (biscuits are his favorite breakfast food and he usually eats 3 or more) The texture was interesting, a bit more chewy and dense than the biscuits I usually make. In the end I gave them 3 stars because they were easy to make (I didn't even roll them out just patted the dough in my hand to the right size). My boyfriends verdict was not to mess with a good thing so from now on I will make my old recipe.

Emily's Famous Hash Browns

This recipe was good, a LOT better than any other hashbrowns I have ever tried. The only reason I gave it only 4 stars is because mine got a little burnt on the outside, didn't stick together very well and were hard to flip... most likely since this was my first attempt it was user error because the taste was good. I did add ground red pepper to the flour before mixing in with the potatoes because my boyfriend likes things to be spicy. He LOVED them even though he's not big on hash browns.

Fried Rice II

I have never made fried rice before but this recipe made it super easy. I had regular instead of instant rice, I didn't have time to refridgerate overnight so I spread the cooked rice onto a plate and put it in the freezer for about 20 minutes, stirring a couple times. Worked great! I didn't have the veggies so I just had onion and egg and bit of garlic salt to add flavor. Cooked the eggs and set them aside as my rice cooled, then put them all back in my egg pan to fry (saved an extra dish) My boyfriend loved it, said it tasted almost like what you get at the Chinese restaurants. Next time will plan ahead and have the veggies.

Chocolate Oatmeal Cookies

I didn't have chocolate chips and I used special dark cocoa and quick oats. These are amazing! I accidentally used 1 tsp of baking soda and left out the baking powder but was pleasantly surprised that aside from flatter cookies than the picture they still tasted wonderful! Can't wait to see how the texture and taste is if I actually make them right next time, if they are this good with my error. Don't know how many cookies it made because I could not stop eating the batter and the cookies as soon as they came out of the oven. YUMMY :)

Fluffy Peanut Butter Frosting

This frosting is amazing! I made half a batch for my cake because I don't like a lot of frosting. I used reduced fat peanut butter and ended up adding a tad more milk but otherwise kept the recipe just as is it. My boyfriend could not get enough of this frosting!!!

Peanut Butter Bars IV

This was sooo good. I used reduced fat peanut butter and I sprinkled the chocolate chips on top when it had 5 minutes left to bake and as soon as I took it out I spread it over the top. Me and my friend ate them in 1 day!!!

Quick Creamy Potato Soup

I did not have bacon (and wanted to save the fat by not putting bacon in anyway) so I omitted it completely, added celery and carrots, lots of pepper, garlic salt and seasoning salt. Also added 1/2 cup so of shredded cheese and let it melt in. it was a bit runnier than I expected, so I thickened it up a bit with corn starch. Great base soup for anyones taste, just add what you like, take out what you don't!

Potato Chips

YUMMY! I tried this recipe and it's great. quick, easy and tasty plus a healthier alternative to store bought chips. The only reason I only gave it 4 stars is because even with the oil they stuck to the plate. And for a twist I seasoned mine with either seasoned salt or cajun seasoning.
