Potatoes Madras

This was very good! Will definately make again. I served with Jasmin rice. One child really enjoyed the cauliflower, the other the potatoes. Will probably add a bit of cayenne next time.

Banana Muffins I

These are good for a low-fat recipe. They are not good when first eating them warm, can definately sense more of the baking powder aftertaste. (and I used less than the recipe called for). Once cooled however, they were tasty enough to eat again. Don't expect a cakey muffin though.

Aunt Mary's Eggplant Balls

With tweaking I think these will be really good. Parsley is overpowering. I subbed more bread crumbs for the parmesan to make non-dairy. They were a little dry. I will try them again though. Once the recipe is tweaked, it's another great way to use the lovely eggplant.

Beans and Greens

Delicious and Easy! I sauteed fresh onion and garlic first, added the frozen spinach and enough broth to cover. Let that cook, then added the beans and spices. Even the kids ate some! (with help).
