Swedish Spareribs

One of the easiest rib recipes I've ever made! Differently wonderful flavor on these! I did cut down on the sugar and the allspice (about 3/4 tbs each) and used a 14 oz can of Beef Broth. Will make again.

Brown Butter Cookies

Like a dummy, I halved this recipe... I am actually surprised that I got any cookies made with how good the dough is! Seriously...it's THAT good. As cookies, these kick the pants off the pre-made boxed Pecan cookies. Soft, chewy, artery clogging goodness. (Frosting is completely unnecessary... Makes 'em too sweet and competes with the cookie)

Tomato Basil Pasta

Versatile and easy. Had a jar of sun-dried tomatoes that needed to be used up, and per BONNIE312's suggestion, used those. Angel hair (Barilla PLUS, with the Omega-3). A couple splashes of Red Wine Vinegar and a pour of White wine. Sauteed the (red) onions, tomatoes, garlic and basil in the olive oil from the tomatoes. Tomato-Basil feta. I found this to be a touch dry, but still very flavorful and a pleasant change.

Best Grilled Margarita Chicken... Ever!

The only changes I made, were nixin' the individual spices and replacing with Penzey's Chicken Taco Seasoning. Halved the olive oil, and only had three chicken breasts. Everything else remained the same. I couldn't even bring myself to finish my piece, and the kids wouldn't even TRY it. (Good thing I planned ahead and threw brats on the grill, too)

Lisa's Chocolate Chocolate Chip Cake

Although this had good flavor, I just couldn't get past the weird eggy texture. It could be related to all the lower fat adjustments (Reduced sugar Devil's Food mix, SF Pudding, Applesauce instead of oil, Light Sour Cream, etc). After three days, there was still a huge chunk of the cake left.

Deep Dish Lasagna

Wow - This is somethin' else! I did use nine noodles, less FRESH spinach (chopped very fine, and didn't measure it), and added some Mozzarella to "Step Four", as suggested by Shelzers. Although this dirtied a TON of dishes, it was forgiven and forgotten after the first bite. Adding to my "paper" recipe box!

Frosted Cocoa Cookies

Four Plus Stars. Don't you dare skip the frosting on these. It DOES make the cookie, so don't skip it! (But, SIFT the powdered sugar and cocoa!!!) * I cut the sugar in the cookies to 1 3/4 cup * These don't spread out much, so make 'em a touch bigger and flatten them a bit when putting 'em on the sheet before baking.

Goulash II

This is what a cupboard of random things gets ya... Here's what I did. Browned the beef with minced garlic and onion. Had to add a second can of cream of mushroom, due to the insanely overpowering Veg soup. Also, chucked in sour cream, milk, a pkg of Country Gravy Mix, Penzey's Black & Red, Penzey's Pasta Sprinkle and a shot of vanilla (yeah: Vanilla). Served over Angel Hair noodles. It wasn't horrible by any means, just something I won't do again...

Herb and Chicken Pasta

Follow Judy's suggestion of adding a can o' diced tomatoes (with basil, garlic & oregano - drained). I also added in some white wine and thickened up the sauce with cornstarch (ran through the sifter, to avoid lumps). Topped with some fresh grated Parmesan cheese, and served with garlic bread. Quick, easy dinner that I didn't have to pressure the kids to eat!

Butterscotch Brownies I

Unless you have amazing dental insurance - you're not gonna wanna make these. (I'm positive after the one I tried, I now have about 16 cavities). For the second time in my life, I have to say something is "TOO SWEET." Used Butter flavored Crisco, nixed the nuts and used Butterscotch chips, and added a splash of oil...otherwise the same. These took an eternity to bake, and by the time they were only "set" in the pan - the outsides were pretty hard and crumbly, with the inside very ooey gooey. More like a "cookie bar" than a brownie...

Chocolate Chip Cookie Bars

We were all jonesin' for something sweet here tonight, and to my dismay I was limited on flour, had NO baking soda OR white sugar. This fit the bill perfectly. Had a lil' less flour than this recipe called for (just over 1.5 cups). Added two eggs, per suggestions. Baked at 325...for an eternity! (Close to 45 minutes) Oh, yeah: I also used a full bag o' semi-sweet choco chips. (Dropped some of 'em on the top before baking, for aesthetic). Easy and killed that "sweetie beast." Thanks!

Creamy Chicken Pasta

Surprisingly quite good! First, I sauteed the chicken in EVOO and Penzey's Italian Herb. For the sauce, I used 2 cans CO Mush, about 1/3 cup of sour cream, Penzey's Black & Red, Garlic powder, more Italian Herb season, and milk. Tossed in a couple handfuls of mixed veggies. And, used more mozzarella. No Yoke noodles. Served with garlic bread.

Ice Cream Cone Treats

When I was a lil' girl, my mother used to make these for us three girls. I thought they were the coolest! Now that I'm a mom, I have carried on this tradition - and my kids go bonkers whenever they see me makin' these. Fun, easy - and the kids will think you rule!

Strawberry Pizza

Four Plus Stars!!! I combined suggestions from shortywcb and TRICIA JAEGER - Halved the crushed strawberry sauce (USED 1/2 cup Pureed strawberries) - this seemed to be just enough. (Neufchatel) Cream cheese flavor came through beautifully! Agree with lisa, however, when it comes to the dough workability. Granted, I didn't refrigerate it - but it was IMPOSSIBLE to roll out, so I too just pressed onto the pan. Light 'N' Refreshing! I will definitely add this to the "Paper" recipe box.

Oregano Cubed Potatoes

These potatoes were...uhhh...interesting. I doubled everything, less the lemon juice (only used 3 tbs). I was hoping for just a HINT of lemon, but it was stronger than I had hoped for. Used dry oregano. Added more garlic, salt and gobs of pepper. (Oh yeah: I parboiled the cubes in chicken stock, too)

Pesto Cheesy Chicken Rolls

I wish I had more pesto... I used Alessi's super duke nukem concentrated Pesto, so just spread a very thin layer (barely had any left). Shredded Mozz cheese. Prior to this, I let the chicken defrost in a pool of EVOO and Penzey's Italian Herb seasoning. I'll make this again, only have normal pesto, instead of a teeny tiny bit of the uber-concentrated stuff.

Broccoli with Lemon Butter Sauce

OMG! This is too good!! I actually had to give a four year old a second helping!! Absolutely use FRESH broccoli. And, I just used "ReaLemon" juice - probably about a TBS. I didn't cover it while cooking. TRY THIS ONE TONIGHT! It's AWESOME!

Wife Saver French Toast

General consensus of the fam? They really liked it. DH: "This is up there with the best!" The lad: "Yummy! It tastes like shin-min (cinnamon) rolls." Even the girl ate this... But, me? I thought this was unpleasant to say the least. Had the consistency of a loose dough! Way too wet, mushy and weird. Had it crisped up - even a little bit, I bet I would have loved it. Only change: Adding in a splash of Almond Extract.
