Grilled Cheese Sandwich

Reviewed: Sep. 5, 2008
*smiles* Reading all these reviews... GC Sammies have a zillion ways to twist 'em. Add in lunch / Deli meats (Ham's a favorite 'round here). 2 Kraft American Singles per sandwich. Muenster is always amazing, too. Come Halloween time, cut a fun pumpkin face into the bread - or use any of your cookie cutters for shaped mini-sammies. Finally: leealli - EXACTLY! Grilled PB&J's are where it's at!!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Sep. 3, 2008
Followed the common mods: Upping the flour by 1/2 cup / baking soda up 1/2 tbs / cut salt to 1/2 tsp. Incorporated mrab03's peanut butter idea. Then, I come to find I have a bit short of 1.5 cups of old fashioned oats and 3/4 bag of MINI chocolate chips... Cooked at 335 (per Fervent Frugal Foodie's suggestion) for 13 minutes, and let sit on sheets for five. Even though these have deviated from the recipe, they are SO GOOD! Next time, though: I'll make sure I have the right amount of oats.

Cakes In A Cone

Reviewed: Aug. 30, 2008
I didn't listen to the warnings about "Don't make the day before", and went ahead and made 'em late last night. Not one complaint about soggy cones. I didn't even get one - that's how fast they went! I did only fill just a hair over halfway (as last time I made them, I went 3/4 and ended up with volcanoes!) - shoot for 2/3 full, because these had flatter tops. Good thing I decorated with the FROG CUPCAKES recipe on here!

Cherry Limeade I

Reviewed: Aug. 30, 2008
Okay, for starters: This is WAY better than Sonic's watered down junk! But, you do have to play with it to perfect it to your own tastes. I used 2 - 12 oz Limeade concentrates, 2 - 10 oz maraschino cherry jars (juice only), 1 1/2 - 2 Ltrs of Sprite. I cut up two whole limes into slices and floated them, squeezed all four "butts" into the bowl for extra limey goodness. So good! (Actually had to make a second batch of it, during the party!) **This is also amazing with some vodka in it!**

Frog Cupcakes

Reviewed: Aug. 30, 2008
These were SUCH A HIT for the kids' fifth birthday!! I did use the mini marshmallows (Due to I can use up the leftover ones better than the big ones), and mini chocolate chips. These weren't as bad or time consuming as expected from some of the reviews. Actually, once you get into your groove, you can whip these out rather quickly. (USE A LITTLE DOLLOP OF FROSTING TO ATTACH THE CHIP TO THE MARSHMALLOW!!) And, used red gel frosting for the mouths. Awesome, Awesome, AWESOME!

Maple-Glazed Sausages

Reviewed: Aug. 28, 2008
I followed Carrie's tips (pan fry, then bake). These were good, but weren't much different than having just regular maple syrup on your plate and dipping the plain sausages in (okay, maybe a bit sweeter). Not really worth the extra step or the brown sugar.

Tomato Cucumber Salad

Reviewed: Aug. 27, 2008
Just kinda "meh" for me. Not great, not horrible - somewhere in the middle. I thought this was missing something, even though I followed the suggestions of basil, olive oil, and a kiss of cayenne.

Jo Jo's Favorite Banana Muffins

Reviewed: Aug. 23, 2008
These bake up beautifully - just like the picture, however, they just didn't do it for me. A bit dry, a bit bland (even used three 'nanas). Pumpkin pie spice VS cinnamon.

Caramelized Bacon Twists

Reviewed: Aug. 23, 2008
There's no possible way "bad" and "bacon" can be placed in the same sentence. This is salty and sweet. I like my bacon crispy but the rest of the family likes it limp, so I baked for the 20 minutes. Probably would've been a five star for me if it were crisp. (Added an extra tsp of Cinnamon)

Chicken Encilantrada

Reviewed: Aug. 20, 2008
Incredible! I cooked the chicken (in tiny bite-sized pieces) in olive oil and Penzey's Chicken Taco Seasoning. In a tbs of olive oil, I sauteed the (red) onion. Didn't measure the cilantro OR the salsa verde (Probably used more than called for). Taking heed of the "Soupy" warnings, I omitted the broth entirely. (This DOES need salt - so don't forget to add that!) And, finally: I took TAMMYBYERLY's idea of using it as a Quesadilla filler, with Reduced Fat Mexican blend cheese. (Set out Light Sour Cream & La Victoria's Cilantro Salsa for topping).

Old German Honey Cookies

Reviewed: Aug. 20, 2008
These are very 'different' cookies, as far as your "typical American" cookie... But, that doesn't mean they're bad! I really enjoyed them, but the kids and husband had absolutely no interest, and the boy LOVES honey. Used 1.25 cups honey and .5 cup sugar. Used mostly shortening, but ran out and used butter for the rest. In addition to the ginger, I added nutmeg and cinnamon. Very cakey cookies, but in a good way. I thought they needed something to give them a little push, so I whipped up a thin and simple glaze of powdered sugar, milk, a kiss of ginger and a bit of honey. (For me, I'd give 'em a four, but since the family avoided them like the plague - I'll stick with three.)

Pasta Lamb Skillet

Reviewed: Aug. 19, 2008
Fantastic 'n' versatile! I used angel hair (Barilla PLUS - with the omega 3), as that's what I had available. A full pound of ground lamb. (Didn't add in the olive oil, as lamb is awfully greasy) Diced tomatoes with basil, garlic & oregano. Skipped the 'shrooms and olives. Used Penzey's California basil. And, Penzey's Lamb seasoning instead of seasoned salt. Wonderful way to use ground lamb!!!

Holland Boterkoek

Reviewed: Aug. 19, 2008
I'd do this one again, only cut the sugar a touch. Added slivered almonds to the top before baking. More crumbly than I anticipated, so I'd probably take this out closer to the 30 minutes next time, too. But, it's quick, easy and really good as is.

Lime-Thyme Potato Wedges

Reviewed: Aug. 19, 2008
Eh... Took forever to bake, too "Thyme'y" and not enough "Limey". (I even cut the thyme down by 1/2 tsp - and I didn't have any zest) Added in a touch of garlic powder, cayenne and brushed each wedge with olive oil. Something I wouldn't do again.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Reviewed: Aug. 17, 2008
It's very rare that you'll find me scraping off any frosting. But, this had me doing so. The cake? Holy Smokes! (Made it with coffee - wow, what a difference!) Rich, decadent, chocolate heaven. But, the frosting? Not so much. Too sweet and didn't complement the cake at all. I'd make the cake recipe again, but definitely find a new frosting.

Chicken Florentine Casserole

Reviewed: Aug. 14, 2008
This had great flavor! I followed most of the common modifications (Skipping the first step, adding white wine, cutting chicken into bite-sized pieces, etc). My only complaint was while in the oven, the sauce became very soupy. The fam seemed to dig this, except for all the "Green" (Added parsley, as well as the spinach). My lil' guy said, "You can make this again, Mommy - but no green stuff!"

Cinnamon Griddle Cakes

Reviewed: Aug. 14, 2008
Per the picture, I was expecting pancakes. But, these puffed up more than regular 'cakes and "Biscuits" is a more appropriate choice of word. Skipped the corn syrup, used the extra TBS of milk, and GOBS more cinnamon. The husband, who usually isn't dazzled by breakfast said, "You toss some raisins in and these would be EXACTLY like the biscuits you used to get at Hardee's". Adding to the paper box!

Chocolate-Zucchini Cupcakes

Reviewed: Aug. 13, 2008
Henry Smith made the best call on doubling the chocolate! I also used 3/4 cup applesauce and 1/4 cup oil, and tossed in a splash of vanilla. These are AMAZING! But the best part? My four year old vegetable hatin' boy won't be hip to the fact that zucchini is in these, because with all that chocolate, you CAN'T SEE IT! Ha! Haven't frosted them and honestly, don't see the need. **Updated** Today, I made these again, and used (instead of oil) 1/2 cup baby food prunes and the rest applesauce), to help out the lil' guy. And, I frosted them with SHINY CHOCOLATE GLAZE for fear that the prune flavor may come through - but it didn't. File this tip away, parents!! You may need a trick up your sleeve in cases like this.

Lower Fat Banana Bread I

Reviewed: Aug. 12, 2008
ZOMG! STARGAZER8383's idea for dried Cranberries - BRILLIANT! Used all applesauce (and about a 1/2 tbs more), all brown sugar (a little short on that), and my bananas only measured out to 3/4 cup... But still: This was really really good - my lil' girl was gobbling this up! I don't know if I'll ever make another variety of banana bread... And, will NEVER leave out the cranberries. (Be generous with the berries - I used about a handful and a half, and found myself wishing I put GOBS more in). FINALLY: Check it early! I yanked mine out of the oven about 16 minutes early.
