Apple Crisp II

Very good - Not quite like Grandma's, but still delish! I went ahead and doubled the crumb crust, only had four apples to spare (foolish...), and kept the syrup original size, as well. If you're gonna do this in a 9X13 - double the whole thing, not just the crumble. Added more cinnamon, ground cloves and nutmeg - to not just the crumble, but the syrup as well.

Golden Potato Soup

I tripled this, thankfully! It's so good, with the additions I tossed in. Corn, (SUPER FINE CHOPPED) broccoli, carrots, garlic, more chicken broth, and used 2% Velveeta instead of shredded. Absolutely perfect on this snowy day.

Caramel Apple Coffee Cake

My changes: ONE CUP of APPLESAUCE, instead of oil. 3/4 cup White sugar and one cup brown sugar, added in Penzey's Apple Pie Spice, omitted the pecans and used three different types of apples (Honeycrisp, Jonathan & Haralson). I also cut the caramel sauce in half. This is pretty darn good, but I'm gonna stick with German Apple Cake I on here.

Fun, Fun, Fun! (But, TIME CONSUMING!) Added a half cup of granulated sugar (for more kid-friendly taste), used half Butter and half Butter Flavor Crisco, SLICED almonds (better aesthetic), and tossed in some green food color.

Hot Ham and Cheese Sandwiches

For a fun, Halloween meal (got the idea from Taste Of Home), I whipped up SPIDER shaped Ham & Cheese sammies. Using GRANDS! biscuits, Pillsbury Bread Sticks, diced ham, American Cheese, onions and mustard (preference). *(Separated biscuits and filled, then assembled)* Did an egg wash for color, and to hold on the olive "eyes". Fill with your desired meat / cheese / condiments - bake 15 to 20 minutes or so at 375. A little time consuming, but the reaction you'll get from the young ones is totally worth it! (Held the bread stick "legs" in place with balled up aluminum foil)

Grandma Gudgel's Black Bottom Cupcakes

Nummy! What I liked about these was the texture contrast. Crusty outsides / soft insides. I'm with Kim, however. These did seem to end up as a "filled" cupcake, rather than a "topped" one. Changes: Replaced 3/4 of the water with coffee, and cut the sugar a little in the cupcake batter.

Peanut Caramel Apple Crisp

Darn it... I was really rootin' for this recipe. Yup... Totally 'soupy' and greasy. Almost too sweet, even with Haralson apples. Stuck this in the freezer, to get it to "firm up" - but then it just got ugly... (All that butter coagulated and looked utterly disgusting) I did use OATS instead of PEANUTS not just out of preference - but I didn't have any peanuts.

Easy French Dip Sandwiches

It doesn't get much easier. For SIX 'hoagie' rolls, I used the full pound of roast beef and one slice of Provolone (broken in half to fit the entire piece of bread). I used one pkg of Au Jus to soak the meat slices, and had to add beef broth (and some bouillon cubes) as I didn't have enough from the one packet of Au Jus. Yum!

Slow Cooker Chile Verde

Nuts to my family... This was right up my alley. First off, I skipped the whole "browning" process. Simply chopped up the meat, and threw it in the crock pot. Then, I dumped in 2 - 16 oz LA PREFERIDA Salsa Verde (Medium), Penzey's Chicken Taco Seasoning, Garlic powder, chopped onion, lime juice, 1/4 can of black beans, diced tomatoes with chiles, corn and cilantro. I did, however, skip the jalapenos because I thought my kids were gonna eat this... They didn't. Nice heat regardless. I didn't make anything to go along with it - just ate it plain, lapping up every last drop of the delicious broth it left behind.

Chocolate Covered Cherry Cookies II

Insanely good! So glad I doubled the cookie recipe (kept the icing at original recipe size)!! Did add the extra egg, did half white / half brown sugar, added a tsp of Almond Extract, and added some cherry juice into the cookie batter (didn't measure, just poured it on it). For the icing, I used a full half cup of cherry juice. As for the cherry itself: I rolled the dough into a ball, flattened it and made an indent with my thumb. Dropped a bit of icing there, to hold the cherry in place - and baked. Then, I did put icing into a baggie and piped it onto the baked cookies. These are going to "WOW" the staff for the Teacher Appreciation Dinner this week!

Sauteed Apples

These are DEVILISH! To make myself feel a bit less guilty, here's my changes: A bit less butter. 4 McIntosh Apples. A shot of vanilla. Skipped the water / cornstarch gig. 6 tbs brown sugar. And, oodles of Penzey's Apple Pie spice and nutmeg. Eight servings? That can't be right or I'm a bigger pig than I thought! Me & one other person took down all of them!

Chocolate Banana Bread

Wow... I never would've thought of this, so THANK YOU, Tracie P.! Okay, I wanted to make this a little less guilty, so I nixed all the butter (I don't buy margarine), and used a full cup of applesauce. Cut the sugar in half, and did 1/2 cup brown and 1/2 white. Only had about 1/2 cup of lite sour cream so I just tossed in some milk. Alright: I thought the chocolate chips were totally unnecessary. It was chocolaty and plenty sweet enough (Next time, I may even cut the sugars more!). And, finally: I added about a tsp of salt.

Shiny Chocolate Glaze

This is glorious! Buttery, chocolatey goodness. Perfect for dipping cupcakes!! (Amount stated was a bit more than I needed to glaze 24 full size cupcakes) Instead of bittersweet chocolate, I used up the rest of my semi-sweet chocolate chips. And, I just microwave'd butter and chocolate - as opposed to using the double boiler.

Brown Sugar Oatmeal Pancakes

Wow, these are heavy. Blended the oats, used all white flour, powder instead of soda, and upped the buttermilk by 1/3 cup. Added cinnamon, nutmeg & vanilla. I got a total of 17 small 'cakes out of the recipe. As a whole, they were alright - but not something I'd do again.

Pumpkin Apple Streusel Muffins

If I used a different apple, these would've gotten the fourth star... My Mods: Full can o' pumpkin, lots more pumpkin pie spice, a bit of apple pie spice, Shredded ONE FUJI apple, chopped up another 1.5 apples, Unsweetened apple sauce instead of oil, Cut the white sugar to just under 1.5 cups. For the topping, I doubled it using BROWN sugar (a touch less), 2 tbs oats, 1 tbs less flour, and more cinnamon. Baked for 22 minutes. They were good, but not quite what I was expecting...I think next time, I'll use a more tart apple, than a sweet, as the Fuji flavor got a bit "lost" in the pumpkin. And, I must've over-mixed because they were just a teeny bit tough.

Wild Rice Harvest Casserole

Yum! Even the typically rice-fearing husband liked this! The only changes I made were omitting the extra 'shrooms and left off the cashews (for two reasons: Lacked them and DH generally hates nuts). I did only have to cook this for the first hour, and unsure if that's related to my making it a day in advance - letting it sit in the fridge, uncooked?

No Tomato Chili

This, unexpectedly, knocked my socks off! I did make a couple teeny changes: Only had two lbs beef, which I browned with the onion and green / red bell peppers (Penzey's dehyd), Used a bit less chili powder (kids are supposed to eat this for dinner), No cumin (fresh out), and just a kiss of oregano. I used two cans of Bush's Chili beans (MILD) - drained, but not rinsed. And, on my bowl, I didn't add any cheese, jalapeno or sour cream - it doesn't need it!!! Threw it into the crock pot this morning on LOW, then I knocked it down to warm - was ready for lunch and man, this is incredible! I didn't even miss the tomatoes!

Smoked Turkey Tortilla Wraps

I made 40 of these (cut into halves, so there were 80 on the platter) for our "Last Days Of Summer" party. Half done in deli ham, the other half in deli turkey. With my 'fraidy cat group over here, I used typical sandwich toppings: Meunster Cheese (Watch out, guys - It's not Kraft Singles!), Leaf Lettuce, Tomato, Red Onion, and Light Mayo. Didn't warm the tortillas - just left everything cold, and wouldn't you know? There weren't many leftover. I am DYING to try these as written, but it will be me only who eats them.

Lime Muffins

With one lone lime in the fridge, I decided to use 'er up and try these. To make 'em lower fat, I subbed unsweetened applesauce for the oil. Had to add LOADS more milk & applesauce, as - like everyone stated - batter is THICK! However, maybe I over did it, because not only did I get 12 REGULAR size muffins, but I also got 10 mini-muffins, too! They have a nice flavor, but the texture is so odd.. Really chewy, and they're awfully "heavy".
