After-Thanksgiving Turkey Soup

OMG. I can't get enough of this soup!!! DH isn't real big on rice, so I leave that out. But, I do add corn and potatoes, to make it more hearty. Penzey's Poultry season, garlic, bay leaves, etc... I leave out the half and half. The flour/butter roux is enough creaminess for me. Most the time, I end up tossing in NO YOKE noodles, too! I end up breaking it into three Tupperware - one for NOW, and two to freeze for later.

Caramel Filled Chocolate Cookies

OMG...In a word, INCREDIBLE! I used all Butter flavor Crisco, cut the white sugar just a bit, upped the flour to 2.5 cups, increased the cocoa a little, omitted the nuts & extra sugar. The cookie itself could stand alone, but... I filled half with regular caramels - cut in half. The other half? Hershey's Cherry Cordial Kisses. That is where it's at!!! In fact, I have to whip up another full batch right now to fill all of them with the rest of the Kisses. TRY THESE - I GUARANTEE THEY WON'T DISAPPOINT!

Bon Bon Christmas Cookies

I'm not the kind who makes the roll out cookies, but these looked so cute and different, that I had to give them a whirl. Amazingly, these weren't as hard as expected, and was actually fun to assemble! (Fused the seams with a bit of water) The bake time could be a bit longer, as they did come out slightly under done. Did add in some powdered sugar to the dough mix (probably about 1/2 cup), and used Neufchatel. Taste as good as they look!

Java Chocolaty Cookies

Wow, these are good! The coffee flavor is so subtle, and more pronounced as an "after taste" than while you're eating the cookie. (I left out the chocolate syrup) HEIDI IN TN may be on to something seriously amazing with that Dark Espresso bar... The hunt begins for one of those.

Chocolate Chocolate Chip Cookies I

Whoa! Super Chocolaty! (Never a bad thing!) Incredibly addicting. Almost brownie-like texture. The only thing I did differently was half brown sugar / half white sugar. Will make a wonderful addition to the Xmas cookie platter!

Chocolate Mint Cookies I

These are knock-down, drag-out AMAZING cookies. I did use Butter-flavor Crisco (just makes a better lookin' cookie!). MILK choc chips, and therefore cut the brown sugar to one cup. Milk instead of water. And, Andes Baking Chips. (Mixed some in with the dough). Then, sprinkled the Andes Baking Chips over the hot cookies and spread. IF these last until Xmas, I know they'll be requested year after year.

Melt - In - Your - Mouth Shortbread

Easy, with staples you have in the kitchen. Did add 2 tsp vanilla, 1 tsp almond extract, and 1 tbs brown sugar. I topped half with Maraschino Cherries and a quick almond glaze (powder sugar / milk / almond extract), and the other half with Strawberry Polaner All-Fruit. Like everyone has said, they're not great. Crumbliest cookie I've ever made... Hopefully, they'll be less crumbly after a couple weeks in the freezer, as I'm taking them to Xmas.

Campbell's® Green Bean Casserole

I halved this, omitting the soy sauce, using more pepper and a kiss of garlic powder. I also sprinkled a bit of Sharp Cheddar into the mix. It's a classic, and deserves it's rightful spot on your Thanksgiving day table.

Homestyle Turkey, the Michigander Way

I did vary this a touch, by cooking it in a oven bag - omitting the salt, putting quartered lemon and onion in the cavity, and pouring some of the bouillon (with garlic in it) inside the cavity, as well. I apparently overcooked the 22 lb'er, as it was registering over 200 degrees on the thermometer and it was pretty dry in spots. The juicy meat was glorious, so I'll try this one again!

Perfect Pumpkin Pie

"Perfect" is the only description for this pie! The only thing I did differently was to A: Heat up the pumpkin puree with the spices, and B: Add cloves. Satiny smooth, fluffy and absolutely divine.

Chocolate Peanut Butter Bars III

These were better the next day. Maybe it's because I totally undercooked the crust part of it. I also used a FULL BAG (less the 1/3 cup for the over the crust layer) of mini-choco chips and 2 spoonfuls of Butter Crisco for the topping, and spread it as a thick layer of frosting. Could've been a bit more peanut butter'y, and they're really sweet. But, they have killed the Sugar Beastie that's been ragin' in me lately.

Chocolate Pudding Pie

This is one of the easiest, quickest desserts that pleases everyone. (Especially my Dad!) I mix this up for him, using different puddings - including combo's of flavors. No garnish necessary! I also leave off the whipped topping, so people can add their own. *Lately, I've been using the reduced fat crusts and Sugar free puddings and no one has even noticed!!*

Yup, I grew up with this too - but it was reserved for the holidays only... As an adult (stupid metabolism) and a mother, I understand why now. My little guy loves to make this, and then he and his sister will literally fight over it! JODILICIOUS is exactly right... RICE CHEX ONLY!

WWII Oatmeal Molasses Cookies

First time I've ever had to throw cookies away. EVER. The only changes I made were using 3T of DARK molasses and omitting the nuts. Like nakita said, these have all the right stuff for a good cookie, but for me and the group, these just didn't do it.

Chicken and Wild Rice Casserole

I changed this one according to what I had, but such is the way of a casserole. For this, I didn't measure anything. I used one pkg of boneless/skinless breasts. To cut down on the time, I skipped the "Simmer for an hour" part. Didn't have any curry or celery. Used cayenne and (Frozen) mixed veggies instead. Nixed the 'shrooms. Used the spices from the rice. And fat free SC and soup. it was pretty good for the few things I had lying about.

Mediterranean Chicken

Much like everyone else, I also had DRIED spices and canned tomatoes. Omitted the oil and olives (to keep it VERY low fat). And instead of individual spices, I just used Penzey's Pasta Sprinkle. (Added crushed red pepper to my portion). Quick & Easy. Made a great low-fat, low-cal, yet flavorful lunch!

Apple Cider Floats

One thing you can't ever top is a good old fashioned Root Beer Float... But, I really wanted to try this. Turns out this is, sadly, only "meh" - Even with Ginger Ale in it. And, this is coming from someone who generally can't get enough cider.

Big Soft Ginger Cookies

There's a reason that there's 1200 Five Star Ratings... These are perfect!!! I did up the spices a bit (heaping measuring spoons), added vanilla and nutmeg, used Butter Flavor Crisco, 3/4 cup BROWN sugar instead of a cup of white sugar, and instead of water, I used Triple Sec. Absolutely amazing.

Scrambled Eggs a la Jan

Keeping in mind these are scrambled eggs: Five Stars. I'm so with TOKYO KAREN - these are like fancy restaurant eggs. I halved this using one extra egg, a little less (light) mayo, and a little extra pepper. Everything else was the same. Will definitely make again, as these were a refreshing change from 'the usual.'

French Breakfast Muffins

These get five stars for the following reasons: TEXTURE - It is very donut-like. EASE - Took all of four minutes to put together. STAPLES - Every ingredient is always in the house. I went ahead and added a kiss of ginger, cloves and cinnamon with the nutmeg. Kids went wild for these, in fact, I got a "Kitchen March 'n' Chant" from the wee lad.
