One Bowl Brownies

Okay, first & foremost: Make sure you read your ingredient list... I must've forgotten how when I was making this. UNSWEETENED CHOCOLATE, not Semi-Sweet. I did, as normal, cut the sugar by half cup. So, though these were texturally perfect, they were FAR TOO SWEET. DH & Kids, of course, loved them - but if given the opportunity, they'd eat sugar by the spoonful...

Cake Mixes from Scratch and Variations

Phenomenal, providing you follow FAMILYJEANS' advice. (Oil instead of shortening, and increasing the liquid, in my case 1/2 cup juice). I made it for the Pineapple Upside Down cake (Using MINI PINEAPPLE UPSIDE DOWN CAKES). Had some extra batter, so I made 12 mini-muffins, topped with maraschino cherries. Light, fluffy and absolutely perfect. Why on earth would anyone use a box mix - EVER - when this is easy, fast & delicious?

Mini Pineapple Upside-Down Cakes

I've never had pineapple upside-down cake before... Had no idea I have been missing out on something so incredible. These are wonderful! I did, however, not use a box mix (yuck!) instead using the recipe: Cake Mixes from Scratch and Variations off here. (Baked with the cherry in place, and used "Tidbit" pineapple.)

Spinach and Cheese Stuffed Pasta Shells

Yum! A little time consuming / labor intensive, but then again so is manicotti or any other "stuffed" dish... I halved this, and didn't measure a thing. Added in sausage, and spiced it to my liking with fennel and Penzey's Italian Herb. The shell noodles were a real kid-pleaser! (And, totally distracted them from the fact spinach is in it!!)

Fabulous Wet Burritos

3.5 Stars. Omitted the individual spices and used Penzey's Chicken Taco. Only half the can of FF refried beans (had to sneak those in!) Skipped the tomato soup, and just subbed in a can of drained Rotel. I admit, I was terribly nervous about the Chili / Enchilada sauce mix, but it wasn't too bad - though I'd prefer just regular enchilada sauce. Topped with Reduced Fat Mexican Cheese, FF Sour Cream, and about a million jalapenos.

Granny's Brownies

DO NOT USE AN 8X8 PAN!! Of course it'll take hours to bake at that size... I followed Linda's mods: Half granulated / half brown sugars, added 2 tbs cocoa, a splash of coffee. I baked 'em at 325 (was roasting a chicken at that temp, as well) and the edges... Oh the edges were charred by the time the middle was "Set". Now, the middle was good - fudgey and delicious, but my whole brownie experience lies within the 'edge' pieces for the texture contrast. I didn't get it from this one.

TAWNIE44 is dead on with her review. Too box-mix tasting. Texture is cakey not cookie-like. DH seemed to like these to a point, but I didn't at all.

Lobster Tails Steamed in Beer

Ugh - we didn't like this at all. The beer ruined it for us! For as often as we get to indulge in lobster (maybe once every couple of years), why would you chance it by steaming it in beer? I wish I thought about that before I made this. The only reason I'm giving it a two star is because I had a TON of butter to dip it in.

Honey-Garlic Angel Hair

My kids usually aren't real big on side dishes, except corn or garlic bread... Until tonight. I figured this would be a winner though (they love noodles, and they love honey), and you'll be hard pressed to find dinner here without garlic. Instead of basil & thyme, I just used Penzey's Pasta Sprinkle. (Barilla Plus Angel Hair, for added nutrition) Keeper!

Sausage-Stuffed French Loaf

Though I really liked this, the family was less than pleased. Didn't have any sausage so I only used beef. Added in more spices (like cayenne, mignonette pepper, etc). Less cheese, and omitted the butter step (save calories). Oh, I had a small loaf of French Bread (half pound) and the full recipe mixture filled it nicely.

Almond Bars

3.5 Stars. After sitting out and uncovered overnight these did get better, though the sugar could and should be cut significantly. Mine turned out rather bar like - crumbly outer, soft 'n' chewy insides. (Baked at the recommended 325 and for about 15 minutes longer than specified) Sprinkled the top with sliced almonds as opposed to the confectioner's sugar. These weren't a kid-friendly treat, and I NEEDED coffee with them.

Chicken Quesadillas

Though I didn't eat these, DH LOVED THEM! Versatile & Quick. Cooked the chicken in a tbs of olive oil and Penzey's Chicken Taco. Used Marble Jack cheese, cuz that's all I had. I omitted the onions, for the five year olds and instead of Ranch, just used Light Sour Cream.

Red Velvet Cupcakes

VERY Good!! Great texture, and these are absolutely gorgeous in presentation. That deep red is beautiful, but I will cut that a touch next time because you can TASTE the food coloring (mostly as an aftertaste)... Used a cream cheese frosting, which I tinted pink and used various Valentine's decorations atop of the cupcakes.

Strawberries and Cream Cake

Good, but not quite what I was expecting. I wanted more of a natural strawberry flavor to these. The Jell-O, though providing a gorgeous color, gave it a slightly artificial taste. I did cut the sugar to 1.5 cups, could probably go a little less still. Frosted entire cake - not just sides - with the CC Frosting (still had a bunch left, definitely cut that in half!). And, only made it a two-layer cake. Pack your layers with berries. I didn't and really wish I did.

Cheesy Ranch Potato Bake

DH really dug these! Me? I could take 'em or leave 'em... I halved the potatoes, used about 1 tbs butter, added in some crumbled bacon, and topped with green onions.

Chocolate Fudge Buttercream Frosting

I didn't have the hot fudge sauce. But, it was good and spread beautifully. Though I found it a bit on the too sweet side. I will try again - with the fudge - but I'll cut the powdered sugar.
