Honey Lime Tilapia

Fantastic!!! I did not make the veggie part of this recipe either. (DH & Kids eating squash or asapargus? Ha!! Never gonna happen). Added into the honey/lime/garlic marinade: Penzey's Black & Red (black pepper and cayenne), and used Low-Sodium Salt. Just the tiniest shake of Penzey's Poultry season. Wow - puttin' this into the "Paper" recipe box!

Crunchy Peanut Butter Swirl Brownies

Chocolate 'n' Peanut Butter. You just can't lose! The changes I made: Five oz Neufchatel. One cup of RF PB. 2 extra tbs sugar. Omitted the egg in that mix, and added a big ole' globber of butter instead. Omitted the peanuts, but subbed in a handful or so of mini-chocolate chips on top of the swirled batter. Pulled these a bit early, so they'd be extra ooey-gooey. Wonderful fresh outta the oven - all fally aparty warm goodness, and even better chilled. I'm in trouble...

Poke Cake I

I remembered this type of cake from when I was a lil' girl, and couldn't recall the taste. I used SF Cherry Jello and SF pudding. This just ain't my bag, I guess. It looks very pretty, but the taste? That's the reason I didn't remember. The kids thought it was cool looking, but wound up scraping the Cool Whip off it, and leaving the cake for dead. (Thankfully my Dad is taking it, so it won't go to waste.)

Cinnamon Cream Syrup

Yes, this is really good... (Here it comes) BUT: I think you could cut the sugar some, as it's VERY sweet. For my own tastes, I dropped in oodles of cinnamon. I didn't like how loose this was - not syrupy in consistency at all..Until after being refrigerated, that is.

Sour Cream Chocolate Frosting

A couple of mods: LITE sour cream. More salt, an extra splash of Mexican Vanilla, and a pinch of cinnamon. (Didn't measure the sugar). At first, when I tried it alone (I admit, I'm a dipper and taster), I didn't dig this at all. I thought it was just weird at best. Until I topped my BANANA CAKE VIII cupcakes with this. WOW! A wonderful complement to the cupcakes.

Banana Cake VIII

The only reason I'm giving these four stars, instead of five is because I changed them a bit... I used 1/2 cup butter and 1/4 cup applesauce. Then, 1/2 white sugar and 1/2 brown. Used buttermilk instead of the sour cream. Mixed the mini chocolate chips in. Didn't bother with the topping, and made into cupcakes. Yield: 39 full size. Check at 13 minutes!! (Topped with Sour Cream Chocolate Frosting and animal sprinkles for kid appeal) YUM!!!

Allspice Cream Cheese Frosting

Devilishly good! I did make a couple small changes. Took PATRINCIA's advice on Penzey's All Spice possibly being stronger than the norm, so I cut that to 1/2 tsp. Used a full 8 oz brick of Neufchatel. And, cut the sugar to 1 3/4 cup. Thanks! Awesome complement to the Spiced Banana Cake!

Spiced Banana Cake

I never thought I'd be giving a banana cake a five star rating... But, man - this is phenomenal. So super moist inside, and the outer edges got a bit crusty, so I was really diggin' that! (Watch your bake times though - I pulled mine 8 minutes early) The oats are completely necessary in this cake so do not skip them!!! *I have no idea what the bananas measured out to - I just used three medium sized ones*

Buttermilk Pancakes II

Our "Off Season" Sunday mornings are Pancake mornings. I felt adventurous today, and strayed from my standby recipes ("TRUCK STOP" or "FRUIT TOPPED BUTTERMILK PANCAKES"). Although these are really good, and very fluffy - I still prefer the aforementioned pancakes over anything. Definitely worth a try, though.

Maple-Vanilla Syrup

If GodivaGirl didn't suggest Almond extract, I would've kept on rollin' by this recipe. (Never have maple flavoring, but I ALWAYS have Almond) and I also tossed in a shake of cinnamon. Although very runny, it's good. But, VERY VERY Sweet. Use just enough to soak into the pancake. **UPDATE** Made it again, cutting the sugar by 1/2 cup and using the Maple flavoring. Worth the trip to the store for the Maple Flavor!

Peanut Butter Banana Oatmeal Raisin

Following the suggestions, I used 2 bananas, a bit extra RF PB (overflowed the measuring cup), 1/4 white sugar, 3/4 brown sugar, whole eggs, added 1% milk. I divided the dough into halves. One half raisins, other half chocolate chips. *Dough is HORRIFICALLY sticky!* I found both versions to be dry, and pretty "floury" in taste. Get these more moist and cut the flour (maybe add more banana, too) and you'd have a super yummy treat.

Toffee Apple French Toast

Sort of disappointing. Followed What A Dish!'s suggestions of cutting brown sugar (1/2 cup), omit white sugar, cubing the Neufchatel, and the layering she did. Added cinnamon, and drizzled with lite maple syrup. Kids wouldn't go near it. DH thought the toffee was "odd". Caramel sauce would've made more sense. If you cube the cream cheese, cut 'em in very small cubes, otherwise you'll have big ol' globbers...

Overnight French Toast

Yum! First, I halved the recipe (using Five eggs), and made some changes due to what I had on hand. Half & Half. Light wheat sandwich bread. And, reluctantly omitted the nuts (DH isn't a fan - but man, that would've added the extra "Ooomph!"). Added cinnamon. After 20 minutes in oven, I poured the sauce over and baked for an additional five minutes. It felt weird not using my usual Almond extract, but the Rum was a welcomed change! Will make again, but am going to try with super-stale Italian bread.

Glazed Salmon Fillet

Pretty tasty! I did add garlic powder, and used Olive oil instead of Sesame. Instead of grilling, I baked it for 13 minutes at 400. Next time, I'll cut the soy sauce down some, as it was a bit strong.

Pico De Gallo

Holy Hannah... After the changes I made, this is borderline perfection!!! I used two tomatoes (large dice), a half of a large red onion (really fine dice), one green onion (finely chopped), very little jalapeño, 3 sprigs cilantro, Low-Sodium salt, and some lime juice (didn't measure - just went to taste). I mixed it all in a colander, to drain juices. I might end up chawin' this all down before the Fiesta tomorrow!!!

Meatball Spaghetti Sauce

Like most reviewers, I only made the meatballs - AgentLucy style. Added in Penzey's Pasta Sprinkle and LOTS more of the recommended spices. (Shorted the milk, as well - didn't measure, just splashed it in) Also, tossed in a bit of Parmesan Cheese into the mixture.

Banana Peanut Butter Bread

Followed the suggestions of upping PB (just under a cup), reducing flour (1 3/4 cup), 3 bananas, half white / half brown sugar, tsp vanilla and chocolate chips. Made as muffins. CHECK THEM EARLY! I burned the hell outta the first 24 full size... As for the 15 mini muffins: I short cooked so they'd be slightly gooey (ten minutes) and they were PHENOMENAL that way!

Lemon Garlic Tilapia

MommyFromSeattle is definitely on to something with those Ritz crackers... I made 2 fillets with the cracker coating (kids / DH), and a plain one for myself. The crackers MADE it. Mine was good, but "Meh." I used less lemon juice. Added in some Pinot Grigio, red pepper flakes, and gobs more garlic. Will make again - but only with the Crackers and jazz it up more - maybe more pepper flakes or cayenne to kick it up.
