Chicken Alfredo with Fettuccini Noodles

Nearly a five star... Bonus points for ease! Sauteed the chicken in olive oil and seasoned with basil and garlic. Halved the sauce, using one stick of butter, part skim ricotta, lots more (Asiago & Parmesan blend) cheese, and seasoned with nutmeg, Penzey's Pasta Sprinkle, parsley, red pepper flakes and loads of pepper. Those who had a problem with "Grittiness" didn't cook the sauce long enough. (I actually boiled mine for a couple minutes). Next time I will add broccoli.

Hidden Treasure Cake

I did go ahead and make a couple of changes, and it was the surprise hit of Father-In-Law's b-day party! First of all, I just grabbed a pre-made angel food cake from the store, and cut it into three layers. 0.3 oz Sugar Free Jell-O and 12 oz LITE Cool Whip. Mixed the partially set gelatin with half of the Cool Whip and sliced strawberries (let firm up again in the fridge), and spread that between cake layers, and finished the top layer with just plain Cool Whip (didn't frost the sides), and garnished with more strawberries atop the cool whip. Light and refreshing with no guilt.

Honey Key Lime Grilled Chicken

Used regular lime juice, and added a touch of Poultry season. Had to bake it due to the oddly cold weather. Marinated for over 24 hours, and what a disappointment. The honey lime flavor only "stuck" to the outside of the breast - didn't infuse the entire piece of meat. Let alone the flavor combination doesn't really go too well with chicken. Much better with a mild fish.

Chocolate Torte

As a whole, I felt it really wasn't worth all the effort. The cake part is good (used half coffee / half water), the filling is just whipped cream - which who doesn't love whipped cream? But that frosting? It was too much, too sweet. With a different frosting and a tweak here & there, this could be a five star.

Delicious Healthy Strawberry Shake

Doubling everything but the milk, and tossin' in a few extra berries, the consistency was great - however, I thought it needed a bit of sugar - added 1/4 cup, next time I'll go with 2 tbs instead. Quick and refreshing!

These are definitely in my "TOP THREE" chocolate chip cookie recipes. I did use butter Crisco and a little bit less of the brown sugar (RAN OUT!). Baked for 19 minutes. Just the right texture - perfectly balanced crispiness and chewiness.

Chocolate Toffee Cookies II

Not quite the "Best" - but man, these can hold their own! I had a partial bag of Heath Bits to use up and my little ones were all over my case for cookies and I wanted to try something new. Used Butter Crisco, (1 tbs) Rum EXTRACT, left out the nuts, and cut the sugar by 2 tbs (1/8 cup). The young 'uns will have me make these again.

Chocolate Cherry Drops

Five star flavor, one star for appearance and ability to hold up. These tasty like cherry infused brownies! I did give an extra TBS cocoa, cut the sugar to 3/4 cup, used Butter Crisco, and added some cherry juice to the dough. Expecting them to stay in the shape I put them on the sheet, I flattened the dough... After 14 minutes in the oven, they were massive. By that I mean, giant pancakes. And, centers undercooked, though the edges were glorious. I'll definitely make these again, just tink with the temp/time, and work on their aesthetic.

Carnitas Filling

So super good (and bonus points for the ease)!!! I used a 2.5 lb roast, so bumped up everything. Diced the onion, coined the baby carrots, (no celery), a can of diced tomatoes with chiles, nixed the individual spices in favor of Penzey's Chicken Taco, extra cilantro, and poured some Chicken broth into the crock pot with everything.

The Best Mashed Potatoes

Worked out beauty in my quest to use up what we've got on hand. Unfortunately, I agree with mandalin84... These were just "meh" - even with the changes I made. (2 lbs Yukons, 3 oz RF Cream Cheese, 1/4 cp butter, handful of parmesan, garlic, milk - oh, left the skins on the 'tatoes, too). Doubtful if this will have a repeat performance.

Glazed Mint Brownies

Starting off with a 9X13 "Family size" box mix (since I have yet to find "PERFECT" from scratch brownies), I doubled the filling (using one tsp of Mint) and upped the glaze by a quarter, as well. Between layers, I popped the pan into the freezer (so as they could be ready for dessert). End result was a touch too minty for our tastes. Kids ended up scraping off the toppings to eat the brownie alone.

Bisquick® Pancakes

I'm with LINDA MCLEAN on this... If you absolutely MUST use Bisquick to make pancakes, the only way to do it is the "MELT IN YOUR MOUTH" way.

Maple Cookies

The kids decided that REAL maple syrup wasn't their bag, so I decided to use it up this way. Cookies deserve 3.5 stars. They're (like everyone's said) not very sweet, and just a super subtle maple flavor (Didn't have maple flavoring). I did add walnuts to the last half of the dough and I thought they were better with them.

Grundle Chip Cookies

Pretty darn good. Though I was a little short on the oats, cut both sugars to 3/4 cup, used Butter flavor Crisco, had walnuts instead of pecans, and added in some Heath Toffee Bits (needed to use up the bag!). DH was even suckin' these down, and he "hates" nuts.... Yeah, right.

Greek Honey Cake

Exactly, Josie. This is good, but certainly not a replacement for Baklava - though it is slightly reminiscent. Didn't have oranges, so omitted the zest. Upped the cinnamon to 1 tsp. It is worth trying, but not enough to warrant a place in the paper recipe box.

Broccoli in Roast Chicken Drippings

Never in a million years would I have thought of this. Thankfully, I found this recipe because it's an incredible way to make broccoli! (Used the Cornish Game Hens With Garlic & Rosemary recipe drippings - and roasted for 9 minutes). KEEPER!

Frosted Banana Bars

Oh. My. Stars. Absolutely, incredibly good. The only changes I made were cutting the sugar to just under a cup and adding chopped walnuts. Made into cupcakes (Yield: 24 full size and 9 mini muffins). Baked at 350 for 18 minutes. (13 for the mini's) Though they didn't need frosting, I wanted to try Jewel's maple take on the cream cheese frosting. Used 3 Tbs Pure Maple syrup (didn't have any extract), and topped with a walnut.

Minnesota's Favorite Cookie

Three & A Half Stars... Texturally perfect cookies, but they're soooo sweet. I did use Butter Flavor Crisco, and only half a cup of the pecans (DH is not a fan of nuts). I'm gonna try these again, but cut the brown sugar by at least 1/2 a cup.

Slow Cooker Buffalo Chicken Sandwiches

E A S Y ! ! I did use an entire 17.5 oz bottle of Frank's BUFFALO WING SAUCE and some chicken broth for the cooking phase. After I shredded the chicken, I added a bit more Frank's, so it wouldn't dry out while on "WARM" in the crock pot. Used provolone cheese and Kaiser rolls.

Fresh Blueberry Pie II

I had two pints of blueberries to use up quickly, so I whipped this up.... Though it's five star in taste (adding vanilla, cinnamon and cutting the sugar to 1/3 cup), the filling amounts are WAAAAAY TOO LITTLE! This barely filled my crust (a pre-baked Pillsbury one). I was unhappy to say the least. I will absolutely make this again, but DOUBLE - if not TRIPLE - the filling!
