Slow Cooker Chicken Stroganoff

My family loved this. I used chicken thighs because my husband hates white meat. I also used real butter and added some Pasta Sprinkle from Penzey's Spices in with the Italian Dressing mix. The thighs cooked for 6 hours and then I cooked the cream cheese and soup in (with a can of mushrooms) while I made the egg noodles to serve it with. Great reviews at the table!

Comforting Chicken

My family loved, loved this. I followed another reviewer's suggestions and made it stove top, cooking the rice in my rice cooker and then combining everything together into one pan of creamy goodness. I used 2 lbs of chicken thighs, b/c it's what I had on hand, and no green pepper b/c we're not huge fans. A generous helping of good quality paprika and chili pepper were perfect. This goes into the, "cold winter night" rotation!

Japanese-Style Sesame Green Beans

This was excellent with some modifications. I used peanut oil instead of canola. I began with green onions and fresh garlic from the farmer's market, letting those brown a bit before I added the green beans. By the time the beans were done, the onions and garlic were nice and carmelized. The cooking method here worked beautifully. Thanks for a terrific jumping off point!

Double Layer Pumpkin Pie

My family raved over this one. I made it gluten free for us by using GF crumbs for the crust and then followed the directions exactly. Wonderful pie. We loved this!

Best Chicken Ever

Awesome! My kids devoured this. I marinated the chicken breasts in sour cream mixed with onion soup mix (gluten free ... my son is celiac) for about an hour and a half. I then crushed GF corn flakes in my food processor and tossed them with garlic powder before coating the (very thick) breasts. I baked at 350 for 40 minutes and they were perfect. This will stay in our rotation!

Valentine Meatballs

We really loved these. I gave them four stars because I made changes: used one pound ground turkey and one pound ground chicken, used mozzarella b/c I didn't have Swiss, mixed everything together at once, and threw in a handful of Penzey's Spices pasta sprinkle. I made 12 round meatballs and then served them over mashed potatoes with a bechamel mushroom sauce. Everyone, including kids, loved them.

Honey Curried Roasted Chicken and Vegetables

I doubled the sauce and put half the sauce over a 7 lb chicken in a slow cooker all day and the other half over cut up potatoes, carrots, portobello mushrooms and onions in the refrigerator to marinate all day. I cooked the veggies at 400 for an hour, roasted some asparagus in the last 12 minutes of that and we had a great meal. The chicken was falling off the bone after 8 hours in the slow cooker. Oh, I only used 2 T butter in the doubled sauce recipe. Yum.

Marinated Baked Pork Chops

I'm going to do what I don't like to see other people do and tell you all the changes I made while giving this recipe 4 stars! I replaced the ketchup with chili garlic sauce, replaced the lemon juice with lime juice, and replaced all of the oil with just 1 Tbsp of sesame oil for a doubled sauce recipe. I also added 2 Tbsp of rice wine vinegar, again for a doubled recipe. I broiled the pork chops, six minutes per side and reduced the marinade to serve as a sauce. Everyone, kids included, loved this. The basic dish was a great jumping off place for us!

Chocolate Chip Cheese Ball

I've made this many times now for parties and it's always a huge hit. I seem to always be sending people back here to get the recipe. Sometimes I cover the ball in chips and sometimes in pecans, both with great results. We love this with Nilla Wafers and graham cracker sticks!

Awesome Korean Steak

Having lived in Korea for two years and fallen in love with the food, I can tell you that this recipe is truly "awesome!" My husband wanted to drink the broth when we were finished picking the meat out! My changes were minor: I used one whole yellow onion instead of the shallots and threw in sliced garlic cloves to make the dish more like I remember it. Both my 6 year old and 3 year old gobbled this up and are already asking me to make it again. Huge hit!!

Awesome Broccoli Marinara

We loved this! My daughter (5) and I both thought it tasted like spaghetti. I will admit it took almost the whole meal to coax her into trying it, but once she did, she devoured it. My 2 year old had no interest (surprise). This is a great way to pack more veggies into supper and is into our rotation!

Slow Cooker Pork Cacciatore

We all loved this. I used chicken (leg quarters with bones and thighs without) and the meat fell off the bone when I took it out. So I ended up stirring it all together into a kind of sauce and putting the whole thing over pasta. My kids (5 and 2) devoured it. And it did make a ton! I have two batches in the freezer for other nights. Yay!

Slow Cooked Pork Barbeque

This was a great slow cooker solution for supper! How easy does it get? I used pork tenderloin and it about fell apart when I took it out. We ate it with some BBQ sauce from the slow cooker poured over it. Yummy. My husband, my 5 year old and I really liked it. My two year old had no interest.

Wild Rice Casserole

This was fine for a weeknight meal, though it took a long time to cook. I used broccoli, carrots, zucchini, mushrooms, onions and fresh garlic. I also cooked it at 375 and it still took over an hour, even stirring every 20 minutes. I used chicken broth (all I had on hand). The rice was still a little chewy while the veggies were pretty mushy. I actually really liked it, but my husband wasn't wild and my kids wouldn't eat it past the one required bite.

Blueberry Gelatin Salad

Honey-Lime Fruit Toss

I replaced the strawberries with grapes because my son is allergic. Everyone really liked this, even my husband who generally refuses to eat fruit with supper (it's "dessert" to him). I eyeballed the honey and will probably add a bit more next time and may try substituting OJ for the lime juice. But good as is and will make again!

Balsamic Glazed Carrots

I'd like to give this 4 1/2 stars. My husband usually won't eat carrots, but he really liked these, even going back for seconds! My five year old, though, generally loves carrots and really did not like these. I think that next time I'll replace the vinegar with OJ for her and see if it goes over better. We will definitely be eating these again!
