About this Cook
I recently moved overseas to Ireland, and I love to cook food that reminds me of home! In addition to cooking good American comfort foods, Tex-Mex and Cajun food, I also love making Italian food. I am a postgraduate student in Ireland, and I also work here in Tourism Marketing.
My favorite things to cook
Anything Italian or Mexican (basically anything with lots of cheese!), and any sort of casserole. My other favorite ingredient is tomatoes, so most of my savoury recipes all include tomatoes and/or cheese in one way or another! I think I must have some Italian in my family somewhere! I also love to make all kinds of chocolate desserts!
My favorite family cooking traditions
My grandmother is Lebanese and we always have homemade hummus and tabouleh during special dinners at her house. I hope to learn to master her Lebanese recipes one day. My mother makes the world's best twice-baked potatoes, and every time I come home I beg her to kae them! They take her all day to make, but they are totally worth it.
My cooking triumphs
I do a great baked chicken parmesean, and I am also proud of my chocolate mousse creations. My friends love my cajun jambalaya, and ask me to make it every time I have them over for dinner!
My cooking tragedies
I lack in my abilities to make a good omelette-every time I try it comes out messy! I absolutely love homemade pizza, and I make it often. However, I am still trying to perfect my recipe. I am almost there!

Spice Baked Rice
yummy! i substituted the tomato juice for chicken stock (as i didn't have tomato juice), and it still came out nicely (but i think the tom. juice would have been better!). also, i added carrots into it also, which went really well with the beef, green peppers and cheese. it made for a great main course. or to make it vegetarian, omit the beef and double the veg. serve it with a side salad. perfect!

Sausage French Bread Pizza
delicious! i make this once a week now. you can get creative and add all kinds of toppings...i did a 'spicy french bread pizza' using spicy sausage, jalepenos and grilled peppers. its so easy and versatile!

Hamburger Cheese Bake
I made this for my roommates. i really enjoyed it, but one of the girls said that it just reminded her of a baked 'hamburger helper.' I guess it kind of does. In that case, I guess its good for kids! (and me!)
