Mexican Casserole
Used more salsa instead of water as recommended in many reviews, but still this was just an average dish that was no more than the sum of its ingredients. Perhaps cooking the chicken, then shredding it would help, but as it is, this is sort of a meaty baked nachos. Reheating it produced a very dry meaty baked nacho dish.

Pumpkin Fluff Dip
Sweet, light, pumpkin pie filling flavor. Be sure to make it at least 8 hours ahead of time to allow the pudding mix granules and the spices time to break down, otherwise, there's a bit of graininess. Also, with time, the spice flavors become more intense. This defintely tasted better a day and a half after mixing it up than it did the same day.

Pork Chops with Raspberry Sauce
Wonderful recipe for "fancy-ing up" pork chops! Easy to make, inexpensive ingredients I suspect apple cider vinegar or maybe even balsamic would work, altering the flavor but not hurting it one bit. My finicky daughter asked for her sauce on the side because she didn't think she'd like it - and ended up using every last drop. The only thing that kept me from giving this 5 stars is the sauce never thickened up and looked a little messy on the plate.
