Spanish Cod

This was just great! We had it with garlic mashed potatoes which went very well with the sauce. My husband who doesn’t like olives (at all) liked the flavor very much. The olives are not overpowering but add a bit of a salty taste. I can’t wait to try this sauce on chicken and even other types of fish.

Chicken Kiev

It definitely needs something – some kind of sauce with it. The breading could use a little kick as well. Is there such a thing as strongly bland? Perhaps my expectations were too high. I’m going to have to play with it a little more before I can say I would serve it to guests.

Spinach-Stuffed Flounder with Mushrooms and Feta

I agree with needing a lot more cheese which is not surprising coming from me. I also added garlic and some scalions which blend in very well with the spinach. This recipe works with blue cheese as well.

Buttermilk Pound Cake

I was in search for the perfect buttermilk pound cake and have been trying many recipes. This one was good but did not make the top of the list. It needed something with it - which if you're planning to serve it with some fruit, ice cream, or chocolaty sauce you should be fine.

Blackened Salmon Fillets

My family LOVED this dish! My mother, the home economics teacher, even requested the recipe! I served it over individual mixed greens salad, but everyone wanted more of it as their entree. It will steal the show!

Herbed Marinated Lamb Chops

I have never prepared lamb with this family of ingredients and wasn't sure we would like it. It is a very quick easy recipe but I agree that it is better to marinate it longer. I made it the night before and it was delicious - not too salty.

I just love this recipe! You can play with the spices and use different kinds of cheeses. I liked the variation with crushed garlic instead of minced. If you end up with too much liquid from the mushroom, add a bit of seasoned bread crumbs.

Peanut Butter Brownies I

Depending on how "nutty" you want them, and if you decide to go with a chunky/extra chunky peanut butter, you can leave out the loose nuts. If you would rather a non-chunky-nutty brownie, add 1/4 cup of creamy PB and substitute 1/2 tsp of vanilla extract for almond extract.

Slammin' Salmon

To make the topping a little more substantial, I added some sliced mushrooms. Sauté them first in a bit of olive oil, garlic, green onions and a bit of salt/seasonings - not from the quantities of the original recipe - and drain the liquid before adding the mushrooms to the salmon as a topping.

Buttermilk Pound Cake II

I love this recipe! This pound cake is wonderfully moist all by itself and does not require any toppings. I leave out the lemon extract and must be very careful with the baking time - in my mother's oven it was done in just over an hour.
