Pesto Cheesy Chicken Rolls

Reviewed: Aug. 13, 2009
This was awesome! I used a jarred pesto and shredded mozzerella for ease of preperation.

Zucchini, Tomato, and Onion Casserole

Reviewed: Aug. 13, 2009
I liked this dish but it is a bit on the vinegary side. I might try it out with a very small amount of balsalmic vinegar next time.

Cheddar Mushroom Potatoes

Reviewed: Jul. 7, 2009
This was a nice dish that the family enjoyed. I mixed the potato slices with the cheese and soup. I topped the dish off with cheese and paprika after removing the cover for the final stage. I think I will try it with a cream of chicken soup next time for my mushroom hating daughter. Thanks!

Grilled Peaches with Berry Sauce

Reviewed: Jun. 16, 2009
This was awesome. I was following the directions exactly but did forget to dot them with butter. This did not seem to hurt a bit so I will leave it out from now on. I served the peaches topped with ice cream and then the sauce. They presented beautifully! Thanks!

Savory Grilled Potatoes

Reviewed: Jun. 16, 2009
This was a nice change from the usual grilled potatoes we have. I subbed Miracle Whip for the mayo as that is what we had. I tripled the sauce and probably added extra parm. This made the sauce somewhat thick but it was still great. Thanks!

Grilled Salmon I

Reviewed: Aug. 24, 2008
I thought this was great. I added finely minced garlic and onion to the marinade. The grill ran out of gas so I baked the salmon in a foil pouch and finished it under the broiler.

Salmon with Lemon and Dill

Reviewed: Aug. 24, 2008
This was overall pretty good. It was a little dilly for me. I did mix the dill into the butter as suggested by other reviewers. I also put it under the broiler for a few minutes after baking.

Bob's Awesome Lasagna

Reviewed: Aug. 24, 2008
This is a very good recipe. I only made two changes. I added some canned mushrooms. Also, I mixed the mozzarella and cottage cheeses with one whole egg and tossed in some parmesean for good measure.

Barbequed Ribs

Reviewed: Jul. 27, 2008
These ribs were great. I left the slab wrapped in foil and put it in the top basket of the grill. It warmed through without drying out while the rest of the meal was cooking. I brought it down over direct heat to baste and finish.

Grilled Zucchini and Squash

Reviewed: Jul. 27, 2008
This is a good base recipe but the amount of seasonings is too much. I cut down on the spices and added sliced onions and some whole cloves of garlic. The vegetables turn out softer than if grilled directly on the grate. I served this up with some baby back ribs and potato salad.

Bacon Wrapped Water Chestnuts III

Reviewed: Jul. 12, 2008
These were delish! I cut the bacon in thirds as others suggested and it was just the right size. I also cut the sauce in half and had enough to do three cans of chestnuts. The reason I gave four stars is because they took much longer to cook than stated. I baked the wrapped chestnuts on a wire rack in a sheet pan at 375 for about 45 minutes. I then dipped each one into the sauce and placed them in a glass baking dish that I had sprayed with cooking spray. I baked them again for another 45 minutes. They came out crispy and gooey. Yum Yum!

Bahama-Mama Pork Chops

Reviewed: Dec. 16, 2007
This was pretty good. I cut pork steak into chunks and stir fried with garlic, soy sauce and onion. Then added the sauce, pineapple and raisins and let simmer for about 15 minutes. We had this over rice with honeyed peas on the side. Thanks!

Amy's Garlic Egg Chicken

Reviewed: Sep. 23, 2007
This was a good recipe. I double breaded the chicken. The only part that was a problem was the fact that the bread on the bottom ended up stuck to the pan, rather than the chicken. I think this might be good on pork chops also.
