Slow-Cooked Pulled Pork Shoulder

This was great! I forgot the salt in the overnight brine (used mostly white vinegar with what little apple cider I had left.) Omitted onion (didn't have one) and cooked on high b/c of what time I started it. So yummy and moist - I always add bbq sauce to my bbq but this was so moist it didn't even need it.

Southern as You Can Get Collard Greens

I've always avoided collard greens, thinking I wouldn't like them. Made this for our New Year's dinner and was pleasantly surprised that I actually ENJOYED them! I used one really big ham hock and cooked it in the broth in a crockpot for a few hours - then transferred to pot where I added/cooked the rest. Really glad I tried this!

Pizza Shells

I loved this! Hubby did, too, though he would have preferred it without the green peppers (my fault - thought he liked them!) I tweaked it a bit - used mozzarella cheese and crushed red pepper instead of mont jack (what I had onhand) and I added cottage cheese for some protein. Combined all the filling ingredients (in my case - cott cheese, mushrooms, scallions, pepperoni, green pepper, real bacon, black olives, cheddar and mozz cheese, along with Italian seasoning) with part marinara/part pizza sauce (again - using up ingred I had onhand) - stuffed shells, topped w/more sauce, cheese and sprinkled w/parm cheese. So yummy and it made tons (plus was able to assemble it early in the day, bake later, serving alongside texas toast, salad and steamed asparagus - great meal!)

Bella's Brussels Sprouts with Bacon

I am so proud of myself (and owe a huge "thank you" to my friend who made these for a Thanksgiving recipe exchange I hosted) - b sprouts were my #1 most hated food, stemming back to childhood. Out of politeness (and the need to not be hypocritical in telling my kids they "need to TRY new foods, otherwise how will you know if you like it or not??") I tried one of these, and it ended up being my favorite dish at the exchange! I made them last night for our first Advent dinner and was thrilled with the results. I omitted butter, used chicken broth, less b vinegar, scallions, did cook the bacon (in oven) until crispy (tossed with sprouts the last few min of cooking,) used more grease than suggested and forgot to halve the sprouts (next time need to - they will cook quicker - core stays hard longer otherwise.) So pleasantly surprised by this recipe!!

Spooky Witches Fingers

This was phenomenal! I followed the cumulative tips (dyed the batter green, used strawberry jam that I added red food coloring to to make it MORE red, rolled each finger out and sliced off the end to square it off/make it look truly severed, dipped it in the jelly - baked the first 5 and saw what others meant - these really do puff up, so you need to roll them out thinner than you'd expect. I also about tripled the almond extract, as I found them to be rather bland.) So delighted with my teen daughter's reaction - completely repulsed upon looking at them - too realistic for her! Husband actually showed them off to some guy friends who were over for football :) Thanks for what will now be a Halloween tradition for us!

Southern Peach Cobbler

This was fantastic! Only thing I did differently was used 10 peaches, and cut them into small chunks (was feeding 7 people.) I baked the first half at home, then waited to bake it the final 30 minutes until I was at the house where it would be consumed. Let it cool for about 20 minutes before we topped with vanilla ice cream - so yummy and simple!

Watermelon Fire and Ice Salsa

LOVED this! Draining it is key (thanks for the suggestion via reviews!) - I was amazed at how long I was able to drain it (an hour?) Kind of eyeballed the measurements - just short of a whole (small'ish) watermelon, a whole jalapeno, hence more cilantro, lime juice and onion. Loved the "hint of lime" tortilla chips with this as someone suggested, and can't wait to try this on top of grilled chicken (as yet ANOTHER person suggested!) Such an intriguging taste combination!

Meatball Lasagna

Fabulous! Disclaimer: I ended up tweaking this recipe quite a bit and doubling it to freeze one, as I was on a mission to use up some ingred we had onhand (starting w/cocktail meatballs), so it wasn't identical to the original. My tweaks: used whole wheat egg noodles, 3 diff jarred spaghetti sauces, fresh and canned sliced mushrooms, cottage cheese (higher in protein) mixed in with the mozzarella and some cheddar, couple more eggs and seasonings (crushed red pepper, fennel, Italian seasoning.)My husband took it to work and said this is my "best lasagna yet!" SCORE! Thanks so much for the inspiration!

EASY PINA COLADA FRENCH TOAST

Just made this for a friend/both our kids while they are visiting...her kids, she and I loved it - mine are too picky to stray from the norm. Loved how easy it was - definitely a great summertime treat. The bananas made this complete - thought I wouldn't need syrup but it topped it nicely. Used a small loaf of french bread sliced thick, that I got for 99cents. Very glad I tried this...curious to see if it would work as a baked french toast for a crowd.

Red Snapper

LOVED this!! Had a touch of Crown leftover, so decided to give this a shot. Went based off of memory as to the amounts of what to use - mine was a touch stronger than intended (used all equal parts whiskey/amaretto/red sugar cranberry juice) - threw in some frozen blueberries for a patriotic drink and loved the taste!

Breakfast Casserole III

I wasn't crazy about this one - I used 5 small russet potatoes (peeled, cubed, sauteed with green onion) and the 12 eggs as called for - too dry for my taste. I like lots of flavor, so I added TJoe's 21 Seasoning spice blend as well as garlic salt and even some tobasco - still not as much flavor as I'd hoped for. Will try again, cutting back on the potatoes as others suggested, so the sausage/egg/cheese flavors can come through.

Glazed Lemon Supreme Pound Cake

VERY easy and tasty (I made exactly as recipe called for)...my only dislike was the glaze. I'm not used to a glaze on the bottom (I used a fancier bundt pan, forked the cake slightly after done cooking and poured glaze on/let set a bit before tipping cake out to slice - glaze was too wet. Keeping it refrigerated helped (even froze it before serving it at an event...that worked best.) Just made it seem like dough was still a bit raw when it was just a wet glaze. Next time I will make a less sweet, white glaze and drizzle on top of the cake once it's turned over. Cake looked very pretty sliced/laid out on a plate with sliced lemons in the middle for display!

Very Easy Mushroom Barley Soup

While I prefer things to have a bit more flavor (I did add some garlic salt, red/black pepper blend) my husband absolutely LOVED this - said it was his favorite thing I've ever made!! He likes simple flavors, healthy foods - not big on caseroles, foods that have to be slaved over. He went back for 2 more "small" bowls (he pointed out :) - and kept asking - "...and barley is good for you, right?" I buy fresh organic spinach in bulk, so threw that in the bottom of our bowls without even cooking it -the broth wilted the spinach on its own - great for adding more nutrients. Thanks for the submission!

Irish Cream Chocolate Cheesecake

Fantastic!! Cheesecakes in a springform pan are my feared recipe...all the talk of the water bath, the cracks, wrapping the dish with foil scares me off most of the time - so glad it didn't this time! I did increase the amount of butter for the crust, to made it easier to press into the pan. I did wrap the bottom outside with foil, sprayed the springform pan with flour/oil spray and put a pan of water on the rack beneath the cheesecake - still cracked just a touch, but just made it authentic looking. So rich and tasty - our hosts happily kept the 2 small leftover slices!

Best Beef Dip Ever

LOVED this! Took others' advice and used 1 c. reduced sodium soy sauce, 3c. water, 3c. red. sodium beef broth. Cooked for about 7 hrs, shredded/removed marbling, cooked another 2 hours or so. Added some dried chopped onion (hubby can't tolerate the real thing) and some regular soy sauce - put horseradish and provolone on buns and toasted, served with the beef - outstanding! I was able to skim more fat off that rose to the top the next night. Great football Sunday food for a crowd.

Zippy Summer Shrimp

These were really tasty and filling, when added to quinoa. I had to add some garlic salt, as I could taste more "spice" than I could "flavor" (if that makes sense). Used frozen pre-cooked salad shrimp that I heated in a wok in the sauce while the quinoa cooked - a great alternative to ordering out Chinese when I want something spicy!

Holiday Chicken Salad

This is great! My husband really enjoyed it, and asked that I make it for his regular lunch rotation at work. Used a rotesserie chix the first time, canned this time, adding Italian seasoning both times. So tasty and healthy, too!

Cha Cha's White Chicken Chili

This was outstanding! My husband, who is not a big chili fan, really liked it, too (got an "eyebrow raise" while eating it - ultimate compliment! : ) I used a shredded rotisserie chicken from Sam's and navy beans, 1 can diced chiles, a smaller amt of jalapenoes that I chopped up. Admittedly not a pretty dish to look at, but MAN, is it good!!

New Orleans Corn Bisque with Smoked Sausage

I love this (haven't brought myself to share it w/hubby yet : ) - used turkey kielbasa, 1 bunch of scallions, frozen corn, chopped carrots, generous dashes of creole seasoning, and omitted potatoes. Strangely, I think sprinkling the cheese on just before eating really makes this dish. Inexpensive to make, easy and ultimate comfort food!

Garlic Cheddar Chicken

Fantastic! I used thick cut pork chops, pre-chopped garlic, panko, threw in some crushed Goldfish crackers (plus parm/cheddar cheese) and baked - may add a touch of salt next time - absolutely going to be a staple in our house!
