About this Cook
Happily married w/2 kids for over 15 years to the man I met during a summer job as a bank teller (so many perks! :) Trying new recipes is an addiction for me - biggest compliment is "Can I please get this recipe from you??" Makes my heart happy! Now if I could just come to grips with the fact my cookbooks will never be interactive and have members ratings and comments following each recipe...
My favorite things to cook
Hmmm...anything chocolate or comfort food'ish. Anything that makes someone else happy, or gets a nod from my husband as he is chewing, followed by a "This is a 'must make again' recipe." If my kids like it, too, I'm ecstatic!
My favorite family cooking traditions
Sunday Advent dinners, breakfast casserole on Christmas morning, New Year's day meal, Sunday pot roasts. Beach staples since high school: Triple Chocolate Cake and Taco Dip (have to submit those on here one day, though I've seen similar versions!)
My cooking triumphs
In my daughter's eyes, anything I make that is "my own recipe" (ie - NOT something I got off of this site! So not fair that she always asks, "So is this YOUR recipe, or did you get it from your website?" (as if using someone else's recipe is cheating!)I'm addicted to checking this site repeatedly throughout the day - I need my fix!
My cooking tragedies
Let's just say I've come a long way from my days in college in Chapel Hill when I had to call my Mom to ask, "So, how do you cook a can of corn...?" (she hasn't let me live that one down YET...)

Slow-Cooked Pulled Pork Shoulder
This was great! I forgot the salt in the overnight brine (used mostly white vinegar with what little apple cider I had left.) Omitted onion (didn't have one) and cooked on high b/c of what time I started it. So yummy and moist - I always add bbq sauce to my bbq but this was so moist it didn't even need it.

Southern as You Can Get Collard Greens
I've always avoided collard greens, thinking I wouldn't like them. Made this for our New Year's dinner and was pleasantly surprised that I actually ENJOYED them! I used one really big ham hock and cooked it in the broth in a crockpot for a few hours - then transferred to pot where I added/cooked the rest. Really glad I tried this!

Pizza Shells
I loved this! Hubby did, too, though he would have preferred it without the green peppers (my fault - thought he liked them!) I tweaked it a bit - used mozzarella cheese and crushed red pepper instead of mont jack (what I had onhand) and I added cottage cheese for some protein. Combined all the filling ingredients (in my case - cott cheese, mushrooms, scallions, pepperoni, green pepper, real bacon, black olives, cheddar and mozz cheese, along with Italian seasoning) with part marinara/part pizza sauce (again - using up ingred I had onhand) - stuffed shells, topped w/more sauce, cheese and sprinkled w/parm cheese. So yummy and it made tons (plus was able to assemble it early in the day, bake later, serving alongside texas toast, salad and steamed asparagus - great meal!)
