My favorite things to cook
Fish and seafood are my favorite things to cook. My husband is more of a meat person so that's a big part of my cooking too. Both of my daughters, as well as myself, are very conscious of our calories and fat grams. So healthy cooking/eating is a must for us. Even though we do splurge for a great dessert every so often.
My favorite family cooking traditions
Summer time is a huge entertaining time for our family. So other than the normal holidays I'd say the outdoor grill arena is a big cooking and celebrating time for us.
My cooking triumphs
The first time I brined a turkey that came out like a pro was a big triumph for me. I was so worried about it not being edible that I had a huge ham just in case!
My cooking tragedies
MANY and I mean MANY years ago when I was first married my in-laws came to our house for a New Years Day dinner. I made black eyed peas that ended up like paste. Obviously overcooked them! Also the first fried egg I ever tried cooking was so undercooked that my sister-in-law, in a very nice way, said "let me help you with that" and she cooked another one for my husband.

Stuffed Mushrooms with Swiss Cheese
I agree that there is just a bit too much butter. Having said that I used 12 medium sized portobella mushrooms and had to use some bread crumbs and chop up about 10 baby bellas to have enough filling. With that said, I only used 4 tbsp. of butter. I liked them but weren't my favorite stuffed mushroom appetizers. The mushroom seemed to overwhelm the filling. Maybe I need to double all of the ingredients for 12 mushrooms. Just an idea! Problem is in a recipe sometimes the 'large fresh mushrooms' are a different size than the ones we use.

Slow Cooker Chicken Taco Soup
HATE TO REVIEW SOMETHING THAT WASN'T MADE EXACTLY LIKE THE RECIPE. BUT, I DIDN'T LIKE THE FLAVOR 'AS IS', SO, THIS IS WHAT I CHANGED: USED 2 CANS OF FIRE ROASTED TOMATOES WITH GREEN CHILIS, ADDED A PACKAGE OF DRY RANCH DRESSING MIX, ADDED A PACKAGE OF DRY ONION SOUP MIX. ADDED JUICE FROM 2 VERY JUICY LIMES WHILE COOKING. ABOUT 30 MINS. BEFORE SERVING I ADDED ABOUT 4 TBSP OF CHOPPED FINE CILANTRO. WITH THESE ADDITIONS I THOUGHT IT WAS GOOD. WITHOUT MY CHANGES THAT'S WHY I GAVE IT 3 STARS. WITH MY CHANGES I'D RATE IT A 5 STAR RECIPE.

Spring Strawberry Salad with Chicken
Thought this was a great summer salad. I made my own balsamic vinaigrette and added 2 tsp. of strawberry jam to the vinaigrette and it was fabulous! Used feta instead of goat cheese - just a personal preference!
