Fluffy Pancakes
I forgot the shortening and these were still the BEST pancakes EVER! Light, fluffy, each one was about 1/2" thick and tasted great. I didn't miss the shortening, so I'm not going to add it next time, either! Thank you so much for this recipe.

Tarragon Chicken Salad II
This is an EXCELLENT chicken salad. The tarragon gives it a sophisticated but subtle "something" that everyone seems to love. I made this for my daughter's baby shower, served on croissants. Everyone LOVED it! I'm thinking about growing tarragon in my garden just so I always have it on hand to make this. Thanks for the great recipe! =)

Strawberry Trifle
I made this exactly as written with one addition -- sprinkle some nutmeg over the pudding layers for a little added flavor. That was a subtle but great addition. It was wonderful, and a hit with the family. Super easy, and beautiful presentation. Make it lighter by using sugar free whipped cream and pudding. Will definitely make again.
