Mexican Bean and Rice Salad

Reviewed: Jun. 4, 2009
Excellent! Light, refreshing, and delicious. Only minor changes: I used a can of Mexicorn and omitted the onions out of preference. Thanks! :)

Very good! These are exactly how described: crisp edges, chewy middles. Just how I like my cookies. :) Thanks!

Romano Cheese Crisp

Reviewed: Jun. 4, 2009
Tasty! I used a blend of shredded Italian cheeses instead of just Romano, as that's what I had on hand. Next time I would stick the bread in the oven for a few minutes to toast it before putting on the topping and broiling, as the bottoms were a little too soft. Thanks! :)

Penne with Chicken and Asparagus

Reviewed: Jun. 4, 2009
Awesome! We loved everything about this. It's really light and delicious. It isn't a heavily flavored dish, but it's still great. I scaled the recipe way back, but wished I hadn't, as we both would have wanted leftovers! Thanks! :)

Amanda's Stuffed Peppers

Reviewed: Jun. 2, 2009
Simple and tasty! I've always cooked my meat prior to stuffing peppers, so this was different for me. I was worried that these would be really greasy because of that, but they weren't at at all. The only changes I made were to omit the onions and I used a blend of shredded Italian cheeses instead of the Parmesan and mozzarella. Thanks! :)

Chococonut Chip Cookies

Reviewed: Jun. 1, 2009
Addicting! These are so insanely good! I followed the recipe as written, aside from halving it, and they came out just great. I baked for 8 minutes and the edges were golden brown and the insides were just a little gooey still, just how I like them. They don't have a -whole- lot of coconut flavor, but they are still delicious. Thank you! :)

Shiitake Angel Hair Pasta

Excellent! The sauce was absolutely delicious. The only changes I made were to omit the onions and use half-and-half instead of heavy cream. I'll make this again. Thank you! :)

Grilled Corn in Husks

Reviewed: May 31, 2009
Excellent! I did soak my corn for several hours, then peeled back the husks and covered with the butter mixture. The corn was cooked perfectly and the butter/parsley flavor was mild, but very good. I'll be using this recipe often. Thanks!

Excellent! I'd never grilled asparagus directly on the grates before and now I will use this method again and again. Simple and delicious. Thanks!

Southern Coleslaw

Reviewed: May 29, 2009
Loved this! We were tired of traditional coleslaw, but I still had a bag of coleslaw mix to use up, so this was the perfect solution. The flavor was so light and refreshing. I'll make this again. Thank you! :)

Better Cheddar Chicken

I thought this was good, but my fiance said it was 'awesome', so 5 stars it is! The only thing I changed was to use leg quarters instead of breasts. Great flavor and crunch and the meat was very moist. Thanks! :)

Orange Pecan Tuna Salad

I didn't care for this. I think it would have been better without the mustard. All the flavors just seemed to be competing, not complimenting eachother. Sorry, but thanks for sharing! :)

Chocolate Zucchini Muffins

Reviewed: May 28, 2009
Good. I did feel that these were a bit overspiced, however. I expected the spices to compliment the chocolate flavor, but instead they overwhelmed it. I'd make these again, but cut down a bit on the nutmeg, cloves, and cardamom. Thanks :)

Spicy Shredded Beef

Reviewed: May 28, 2009
Excellent! I doubled the cumin and used diced tomatoes with green chilies. I browned the meat, added the spices, then dumped everything in my slow cooker. Cooked on low for 4 hours and the meat was cooked perfectly. I took the cover off for a little while after that and let the liquid evaporate. Loved it, thank you! :)

Peanut Butter Chocolate Chip Cookies III

Reviewed: May 27, 2009
Very good. I halved the recipe and only got 18 smallish cookies, so I think the serving size must be a bit off. Anywho, very tasty. My fiance requested the chocolate chip/peanut butter cookies and he says these are fantastic. Thanks :)

French's® Crunchy Onion Pork Chops

Reviewed: May 27, 2009
While I am not too fond of onions themselves, I love French-fried onions, so I was excited to see this recipe. The flavor was pretty good and the chops were really moist and tender. I did add the thyme and garlic powder mentioned in the footnotes. My complaint is that the bottoms were SO soggy! It seemed as though the onions were releasing a lot of grease during baking, so the chops were just sitting in it. I wish I would have cooked these on a rack. Thanks :)
